How to Make It

Start by adding your chopped Yukon gold potatoes straight into the crockpot. No need to peel them unless you want to — the skins add great texture. Add the celery, carrots, onion, and minced garlic right on top. Sprinkle in the garlic & herb seasoning, Cajun seasoning, and cayenne pepper, then pour in the chicken broth. Give everything a gentle stir to make sure the seasonings are evenly distributed.

For the smoked sausage, you have two options. If you’re short on time, simply slice it and toss it in. But if you want maximum flavor, sauté the sausage in a little butter over medium heat until it gets golden and caramelized. That browning adds an incredible smoky richness to the soup. Ingredients
  

  • 3 lbs Yellow Potatoes, chopped into small pieces or any type of potato you prefer!
  • 2 Celery Ribs, Diced
  • 2 Carrots, Diced
  • 1 Yellow Onion, Diced
  • 6-7 Garlic Cloves, minced
  • 1 tbsp Mrs Dash Salt Free Garlic and Herb Seasoning or any salt free blend that you like
  • 1 tsp Slap Ya Mama Cajun Seasoning
  • 1/2 tsp Cayenne Pepper optional for a little heat
  • 5 Cups Low Sodium Chicken Broth
  • 14 oz Smoked Sausage, sliced
  • 1 Cup Heavy Cream
  • 3 tbsp Cornstarch + 3 tbsp Cold Water makes a cornstarch slurry to thicken the soup
  • 4 Cups Sharp Cheddar Cheese, freshly shredded

Instructions
 

  • Add the potatoes, celery, carrots, onion, and garlic to the crockpot. Season with the garlic & herb seasoning, Cajun seasoning, and cayenne pepper. Pour in the chicken broth and stir everything together.
  • Sauté the sliced smoked sausage in butter until lightly browned, then add it to the crockpot. (Or skip this step and add the sausage directly for a dump-and-go option.)
  • Cover and cook on high for 3–4 hours or low for 4–5 hours, or until the vegetables are tender.
    (All slow cookers are different so timing may vary depending on your appliance!)
  • Stir in the heavy cream. Mix the cornstarch with cold water, then add it into the soup and stir. Add the shredded cheese one cup at a time, stirring well until melted and smooth. Taste and season with salt and pepper.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or microwave, adding a splash of broth or cream if the soup thickens too much.

    I made as directed aside from using a mixture of mild and sharp cheddar, and it was fantastic!! My husband and I both loved it. My potatoes weren’t soft enough at the 4.5 hour mark but that may be due to the crockpot I have, so I just cooked longer 🙂

    1. Hi Dana! You can definitely make this on the stovetop. You would just want to saute the smoked sausage in the pot first, then add the vegetables, seasonings and broth. Let it simmer on low until the potatoes are tender, (20 minutes or so) then continue with the heavy cream, cornstarch slurry and cheese! Hope you enjoy!
