Crockpot Cheesy Smoked Sausage & Potato Soup

Ingredients

  • 3 lbs Yellow Potatoes, chopped into small pieces or any type of potato you prefer!
  • 2 Celery Ribs, Diced
  • 2 Carrots, Diced
  • 1 Yellow Onion, Diced
  • 6-7 Garlic Cloves, minced
  • 1 tbsp Mrs Dash Salt Free Garlic and Herb Seasoning or any salt free blend that you like
  • 1 tsp Slap Ya Mama Cajun Seasoning
  • 1/2 tsp Cayenne Pepper optional for a little heat
  • 5 Cups Low Sodium Chicken Broth
  • 14 oz Smoked Sausage, sliced
  • 1 Cup Heavy Cream
  • 3 tbsp Cornstarch + 3 tbsp Cold Water makes a cornstarch slurry to thicken the soup
  • 4 Cups Sharp Cheddar Cheese, freshly shredded
  • Salt and Pepper to taste

Instructions

  • Add the potatoes, celery, carrots, onion, and garlic to the crockpot. Season with the garlic & herb seasoning, Cajun seasoning, and cayenne pepper. Pour in the chicken broth and stir everything together.
  • Sauté the sliced smoked sausage in butter until lightly browned, then add it to the crockpot. (Or skip this step and add the sausage directly for a dump-and-go option.)
  • Cover and cook on high for 3–4 hours or low for 4–5 hours, or until the vegetables are tender.
    (All slow cookers are different so timing may vary depending on your appliance!)
  • Stir in the heavy cream. Mix the cornstarch with cold water, then add it into the soup and stir. Add the shredded cheese one cup at a time, stirring well until melted and smooth. Taste and season with salt and pepper.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or microwave, adding a splash of broth or cream if the soup thickens too much.
