Ingredients You’ll Need

  • 1 pound of bacon – cooked and crumbled. Turkey or beef bacon can be used. And pre-cooked bacon bits can be used in a pinch.
  • 30-ounce bag of frozen tater tots – Pre-baking helps ensure they stay crispy on top.
  • 1 pound of breakfast sausage – Pork sausage gives great flavor, but turkey sausage or plant-based options work too.
  • 1 medium yellow onion, diced
  • 1 green bell pepper, diced – Feel free to use red or orange for a sweeter flavor.
  • 8 large eggs
  • ½ cup of whole milk – Half-and-half or heavy cream can make it even richer.
  • 1 tsp Fire & Smoke Society Onion Butter All-Purpose Blend – Or any favorite all-purpose seasoning blend.
  • 1 tsp black pepper
  • ½ tsp Slap Ya Mama Cajun Seasoning – Optional for a little kick; use smoked paprika or chili powder for a milder alternative.
  • 4 cups shredded cheese total – A mix of sharp cheddar and pepper jack adds flavor and heat. You could also use Colby Jack, Monterey Jack, or mozzarella.

Instructions:

Start by making your bacon. I like to make mine in the oven! It is easy and mess-free! To start, preheat your oven to 400°F.

Then line a baking sheet with parchment paper, lay out the bacon, and bake it for about 20 minutes until crispy. Once cooled slightly, crumble the bacon and set it aside.

This step is optional, but I highly recommend crisping your tots in the oven while you are preparing the rest of the dish. This will ensure that they are crispy and don’t turn into mush. Just place them on a baking dish and put them in the oven.

Now you want to cook the sausage mixture:

In a large skillet over medium heat, cook 1 pound of breakfast sausage with the diced onion and green bell pepper. Sauté until the sausage is fully cooked and the veggies are softened. Drain any excess grease and set the mixture aside to cool slightly.

Now for the eggs. In a mixing bowl, whisk together 8 eggs, ½ cup of whole milk, 1 tsp of onion butter seasoning, 1 tsp black pepper, and ½ tsp Cajun seasoning (if using). Make sure the eggs are well beaten.

Finally, grease your baking dish. Add the cooked sausage mixture directly into the dish. Pour the egg mixture over it, then half of the crumbled bacon and 2 cups of the shredded cheese, and mix it up until everything is evenly distributed.

Lastly, sprinkle 1½ cups of cheese over the mixture. Arrange the pre-baked tater tots in a single layer on top. Finish by sprinkling on the remaining bacon and an additional ½ cup of cheese.

Cover with foil and bake at 400°F for 30 minutes. Then remove the foil and bake for an additional 15–20 minutes, or until the eggs are fully set and the tater tots are golden and crispy.

Serve this casserole with a fruit salad, fresh biscuits or toast, or even a simple green salad if you’re making it for dinner. It’s also great as part of a larger brunch spread with muffins, cinnamon rolls, and coffee.

  • 1 lb Bacon, cooked and crumbled divided in half
  • 28-30 oz Bag of Frozen Tater Tots
  • 1 lb Breakfast Sausage
  • 1 Yellow Onion, Diced
  • 1 Green Bell Pepper, diced
  • 8 Eggs
  • 1/2 Cup Whole Milk half and half or heavy cream can also be used
  • 1 tsp All Purpose Seasoning Blend
  • 1 tsp Black Pepper
  • 1/2 tsp Slap Ya Mama Cajun Seasoning optional, and can use any cajun seasoning
  • 4 Cups Shredded Cheese, divided I used half sharp cheddar and half pepper jack

Instructions
 

  • Preheat oven to 400°F. Place the tater tots in the oven while preparing everything else.
  • In a skillet, cook sausage with onion and bell pepper over medium heat until browned; drain the excess grease. Take it off the heat and allow it to cool slightly.
  • In a bowl, whisk eggs, milk, and seasonings.
  • Grease your baking dish. Add the sausage mixture, half the bacon, the eggs and 2 cups of the cheese and mix well.
  • Top with 1½ cups cheese, arrange tater tots, then top with remaining bacon and ½ cup cheese.
  • Cover with foil and bake 30 minutes. Uncover and bake 15–20 more until eggs are set and tots are golden.
    Allow it to sit for about 10 minutes before serving to help it set. Serve hot and enjoy!

Notes

Make-Ahead and Storage Tips

  • Make-Ahead: Assemble the casserole (without baking) the night before. Cover and refrigerate. In the morning, bake as directed—just add 5–10 extra minutes to the baking time.
  • Freezer-Friendly: Bake and cool completely, then wrap well and freeze for up to 2 months. Reheat in the oven at 350°F until warmed through.
  • Storage: Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the microwave or oven.
