1lbBacon, cooked and crumbleddivided in half
28-30ozBag of Frozen Tater Tots
1lbBreakfast Sausage
1Yellow Onion, Diced
1Green Bell Pepper, diced
8Eggs
1/2CupWhole Milkhalf and half or heavy cream can also be used
1tspAll Purpose Seasoning Blend
1tspBlack Pepper
1/2tspSlap Ya Mama Cajun Seasoningoptional, and can use any cajun seasoning
4CupsShredded Cheese, dividedI used half sharp cheddar and half pepper jack
Instructions
Preheat oven to 400°F. Place the tater tots in the oven while preparing everything else.
In a skillet, cook sausage with onion and bell pepper over medium heat until browned; drain the excess grease. Take it off the heat and allow it to cool slightly.
In a bowl, whisk eggs, milk, and seasonings.
Grease your baking dish. Add the sausage mixture, half the bacon, the eggs and 2 cups of the cheese and mix well.
Top with 1½ cups cheese, arrange tater tots, then top with remaining bacon and ½ cup cheese.
Cover with foil and bake 30 minutes. Uncover and bake 15–20 more until eggs are set and tots are golden.Allow it to sit for about 10 minutes before serving to help it set. Serve hot and enjoy!

Make-Ahead and Storage Tips
Make-Ahead: Assemble the casserole (without baking) the night before. Cover and refrigerate. In the morning, bake as directed—just add 5–10 extra minutes to the baking time.
Freezer-Friendly: Bake and cool completely, then wrap well and freeze for up to 2 months. Reheat in the oven at 350°F until warmed through.
