Breakfast Tater Tot Casserole

This recipe brings together all your breakfast favorites in one baked dish: crispy bacon, flavorful sausage, tender eggs, sharp cheese, and golden tater tots. Plus, it’s super easy to prep ahead and pop in the oven when you’re ready.

Ingredients

  • 1 lb Bacon, cooked and crumbled divided in half
  • 28-30 oz Bag of Frozen Tater Tots
  • 1 lb Breakfast Sausage
  • 1 Yellow Onion, Diced
  • 1 Green Bell Pepper, diced
  • 8 Eggs
  • 1/2 Cup Whole Milk half and half or heavy cream can also be used
  • 1 tsp All Purpose Seasoning Blend
  • 1 tsp Black Pepper
  • 1/2 tsp Slap Ya Mama Cajun Seasoning optional, and can use any cajun seasoning
  • 4 Cups Shredded Cheese, divided I used half sharp cheddar and half pepper jack

Instructions

  • Preheat oven to 400°F. Place the tater tots in the oven while preparing everything else.
  • In a skillet, cook sausage with onion and bell pepper over medium heat until browned; drain the excess grease. Take it off the heat and allow it to cool slightly.
  • In a bowl, whisk eggs, milk, and seasonings.
  • Grease your baking dish. Add the sausage mixture, half the bacon, the eggs and 2 cups of the cheese and mix well.
  • Top with 1½ cups cheese, arrange tater tots, then top with remaining bacon and ½ cup cheese.
  • Cover with foil and bake 30 minutes. Uncover and bake 15–20 more until eggs are set and tots are golden.
    Allow it to sit for about 10 minutes before serving to help it set. Serve hot and enjoy!

Notes

Make-Ahead and Storage Tips

  • Make-Ahead: Assemble the casserole (without baking) the night before. Cover and refrigerate. In the morning, bake as directed—just add 5–10 extra minutes to the baking time.
  • Freezer-Friendly: Bake and cool completely, then wrap well and freeze for up to 2 months. Reheat in the oven at 350°F until warmed through.
  • Storage: Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the microwave or oven.

  • Add diced jalapeños or hot sauce for heat.
  • Swap in mushrooms, spinach, or diced tomatoes for added veggies.
  • Try using different meats like ham, chorizo, or turkey sausage.
  • Make it vegetarian by skipping the bacon and sausage and adding plant-based sausage or sautéed veggies.
