Instructions

In a large mixing bowl, combine the mayonnaise, sour cream, and taco seasoning. Stir until smooth and fully blended.

Add in the drained corn, diced green bell pepper, diced red onion, and the can of mild green chiles. Give everything a good mix so it’s evenly coated in the dressing.

- 1 Green Bell Pepper, diced
- 1/2 Large Red Onion, diced
- 4 oz Can of Diced Chilies
- 2 Cups Shredded Cheese
- 9.25 oz Bag of Chili Cheese Fritos you can use regular ones if you prefer
Instructions
- In a large bowl, stir together mayonnaise, sour cream, and taco seasoning until smooth.
- Add corn, bell pepper, red onion, and green chiles. Mix until well combined.
- Stir in shredded cheese until evenly distributed.
- Cover and refrigerate for at least 1 hour.
- Just before serving, stir in most of the Fritos, reserving about 1 cup. Top with remaining Fritos and serve immediately.

Store leftovers in an airtight container in the refrigerator for up to 3–4 days.Note: The Fritos will soften over time, so for best texture, add them fresh each time you serve.

Can I make this ahead of time? – Yes! You can make the entire salad ahead of time, just wait to add the Fritos until right before serving.
How long does it last in the fridge? – It will keep for 3–4 days, as long as the chips are not added in. they do become soggy after a few hours. Sometimes I will just set the chips next to the dish and let people add them in themselves.
Can I use a different cheese? – Absolutely. Sharp cheddar, Colby Jack, Pepper Jack or fiesta blend all work well depending on what you have on hand.
