How to Make Sloppy Joe Biscuit Casserole

Start by browning the ground beef in a large skillet over medium heat along with the diced onion, green bell pepper, and minced garlic. Cook until the beef is fully browned and the vegetables are softened, then drain off any excess grease.

Season the mixture with your salt, pepper, and garlic blend, then stir in the tomato paste. Let that cook for a couple of minutes to deepen the flavor before adding the tomato sauce, Worcestershire sauce, brown sugar, and ketchup. Stir well and let the mixture simmer on low while you prepare the topping.

In a mixing bowl, combine the Cheddar Bay Biscuit Mix with the milk (or water) and shredded cheddar cheese. Stir just until combined — no need to overmix.

Pour the sloppy joe mixture into a 9×13-inch baking dish, then sprinkle the top with additional shredded cheddar cheese. Carefully spread the biscuit batter over the top using a rubber spatula. It doesn’t have to be perfect — a little mixing at the edges is totally fine. Bake uncovered at 425°F (220°C) for about 20 minutes, until the biscuit topping is golden brown and the edges are bubbling.

While the casserole is baking, mix the melted butter with the seasoning packet from the biscuit mix. As soon as the casserole comes out of the oven, brush that buttery seasoning all over the top.

Serving Suggestions

I served this with green beans and tater tots, and it was a hit.

It’s also great with:

  • French fries
  • Macaroni and cheese
  • Corn or buttered peas
  • A simple side salad

This casserole is filling on its own, but those sides make it feel like a full family feast.

Tips for Success

  • Let the sloppy joe mixture simmer briefly so the flavors really meld
  • Don’t worry about spreading the biscuit topping perfectly
  • Bake until the top is deeply golden for the best texture
  • Brush the butter on while it’s hot so it soaks in beautifully
