Wow! I cannot put into words just how amazing these Chicken Caesar Sub Sandwiches were!! I have always loved a good Caesar Salad. And until recently I have never thought to make one into a sandwich! I feel like I have been living under a rock. But I am so glad I stumbled on a video on Tiktok that did exactly that. It was beautiful! I wanted one! Now, at the time of me writing this and finally trying the recipe, I recently underwent surgery. Just now I am getting back into the kitchen and putting recipes on here and I feel like I am coming back with a bang! I did my best by putting my own spin on these Chicken Caesar Sub Sandwiches. We will walk through it step by step. It may seem like a lot, but don’t feel intimidated at all! Each step is really easy.

What You Will Love about these Chicken Caesar Sub Sandwiches

Pretty much everything! You can whip up the homemade dressing in a matter of minutes. After several failed attempts at making Caesar dressing, I FINALLY found THE ONE! So delicious. The chicken cutlets are cooked to crispy perfection. And the bread is toasted with a garlic butter that you will be making on repeat for lots of dishes!

How to Make Chicken Caesar Sub Sandwiches:

Caesar dressing

We will start with the homemade Caesar dressing. In a food processor or blender, you will mix garlic, anchovies, mayo, dijon mustard, lemon juice, Parmigiano-Reggiano and black pepper. (If you can’t or won’t eat anchovies, you can use anchovy paste or Worcestershire sauce as a substitute.) The full recipe with exact measurements will be on the recipe card below!

Next we will make the garlic butter. You certainly do not have to toast the bread but I STRONGLY recommend it! I considered putting croutons in with the salad mix, but toasting the bread like this replaces the need for that. I don’t think I would have liked the texture either.

For this garlic butter, you will mix together 1 stick of room temperature butter, mayo, minced garlic and chopped parsley. Again, the exact measurements will be on the recipe card below.

One of the most important things when it comes to making chicken cutlets is to be sure that you are using really thin-cut breasts. If the store does not have them pre-cut, I will slice the large breasts in half and pound them out. You want them to be around 1/8th of an inch thick. This will ensure they cook evenly and quickly without burning.

You will need two decent size bowls. In the first one, crack 3 eggs, season with salt and pepper and whisk really well. In the second, add Italian bread crumbs, panko bread crumbs and grated parmesan. Stir well. Dip the cutlets into the egg, then into the bread crumbs, being sure to press the batter onto each one. Let sit for about 10 minutes before cooking. Fry in a neutral oil, I like avocado oil for approximately 3-4 minutes per side. They are done when both sides are a light golden brown. (Always use a meat thermometer to ensure you have cooked your chicken to the safe temp of 165 degrees.)

Bringing it all together!

And now the magic happens! Use any type of bread you like. I used a loaf of French bread from my local grocery store. I think Ciabatta would also be an amazing choice! Slice it in half lengthways. Try not to cut all the way through but don’t worry if you do. Anything that falls out of this sandwich, you’re going to eat with a fork anyways!

Next, slather both sides with that amazing garlic butter. Then put it in a 425 degree oven for about 5-7 minutes, just until lightly toasted.

Now we’ll make the lettuce mixture. Chop up two hearts of Romaine lettuce and put into a bowl. Cut up two of the chicken cutlets into bite-sized pieces and add them in. Pour in as much dressing as your heart feels is right and add some freshly grated Parmigiano-Reggiano. Toss that really well.

Now start spooning that mixture onto that beautiful garlic bread. Slice it up (or don’t) and enjoy one of the best sandwiches of your life!

Chicken Caesar Sub Sandwich

An incredibly tasty twist on the classic Chicken Caesar Salad. All the flavors you love in a handheld sandwich!

Ingredients
  

Caesar Dressing

  • 2-3 Garlic Cloves
  • 4-5 Anchovies (packed in oil) you can substitute 1 tablespoon of anchovy paste or 2 tablespoons of Worcestershire sauce
  • 1 Cup Mayonnaise
  • 1 Tbs Dijon Mustard
  • Juice of 1 Lemon
  • 1/2 Cup Freshly grated Parmigiano-Reggiano cheese or you can use Parmesan
  • 1 Tbs Freshly cracked black pepper

Garlic Butter

  • 1 Stick (8 tbs) Room Temperature Salted Butter
  • 1/4 Cup Mayonnaise
  • 3-4 Garlic Cloves, minced
  • 2-3 Tbs Chopped Fresh Parsley
  • 1/2 Cup Pecorino-Romano cheese, Freshly Grated or you can use Parmesan

Chicken Cutlets

  • 4 Thinly sliced chicken cutlets
  • 3 Eggs
  • 1 Cup Italian Bread Crumbs
  • 1/2 Cup Panko Bread Crumbs
  • 1/2 Cup Grated Parmesan Cheese
  • 1-2 Cups Avocado Oil any neutral oil will work

2 Loaves of French Bread or any other type of thick hearty bread that you like

    2 Bunches of Hearts of Romaine lettuce, chopped

      Salt and Pepper to taste

        Instructions
         

        • In a food processor or blender, mix together all of the ingredients listed for the dressing. Transfer to a storage container and set in the fridge while you finish everything else.
        • In a bowl, mix together the ingredients for the garlic butter spread and set aside. Do not put in the fridge as you want this spreadable when you assemble the sandwiches.

        Chicken Cutlets

        • In one bowl, whisk together 3 eggs seasoned with approximately 1 teaspoon each salt and pepper. In another bowl, mix the bread crumbs and grated cheese.
        • Dip the cutlets in the egg mixture, then into the bread crumb mixture, being sure to press the bread crumbs firmly onto the chicken. Let sit for about 10 minutes before cooking.
        • Heat the oil in a pan over medium heat. When the oil is shimmering, gently place the cutlets into the pan and fry approximately 3-4 minutes per side, turning once. They are ready to turn when the edges start to turn golden brown. When they are golden brown on both sides, remove and let them drain on a wire rack or on a paper towel-lined plate. Chop up into bite-sized pieces

        The Garlic Bread

        • Cut the loaves in half lengthwise. Spread the garlic butter on each half. Place in a 425 degree oven for about 5-7 minutes or until lightly toasted.

        The Salad Mix

        • Add the lettuce, the chopped up chicken, as much dressing as you like, and about 1/2 cup of some more Parmigiano-Reggiano into a bowl and mix well.
        • Place the salad mix in the toasted bread. Slice it up if desired and enjoy!

        Notes

        This recipe is enough for two  loaves of French bread. If you only need to make 1 sandwich, cut everything in half except for the dressing. You can make the dressing and store it in the fridge for 1-2 weeks. 
        Do not make more than about 1 hour ahead of time as the lettuce will get soggy.  You can make the dressing, the garlic butter and the chicken ahead of time to have ready to assemble when you are ready to make the sandwich though! 
        If you do not wish to make your own dressing, simply use your favorite store bought brand! Likewise with the chicken. You can easily use frozen breaded chicken and cook according to the package directions. You can also use rotisserie chicken or unbreaded chicken and cook it the way you like it.
