Buttered Noodles

Sometimes simpler is just better! As is the case with these rich and creamy buttered noodles. I started making these several years ago when 2 of my children just suddenly decided that they didn’t like spaghetti with meat sauce anymore. Actually a lot of my recipes are a result of having picky eaters lol!
Since then, I have actually perfected my recipe and I love making them. Follow this recipe to the “T” and you will become as obsessed as my kids and I are!

Do You Have To Use A Certain Type of Pasta?
Actually, no you do not. Long types of pasta such as fettuccini and linguini do work better in my opinion, but literally any kind will work. Just make sure to use 1 lb for this recipe.
Salted or Unsalted Butter?
It does not matter for this recipe. I use salted, but the dish will need additional salt at the end either way, so use whatever you have on hand.
Is Using the Pasta Water really that important?
Yes yes yes!!!! The salty, starchy water adds flavor, binds the pasta to the sauce and also helps make it creamy! Do not skip that part!

This is just a summary, the full recipe is below. The first thing you are going to do is get your pasta water boiling and add plenty of salt and a tsp of chicken flavored bouillon to the water. Boil the pasta just to al dente, but do not drain it!

When the pasta has about 6 minutes left of cooking time, melt a stick of butter in a skillet over low/medium heat. This process goes quickly and you don’t want your pasta overcooked so timing is important!
You will then add in 6-7 minced garlic cloves and cook just until garlic is fragrant, being very careful not to burn it! It will only take about a minute.


Now it is time to grab a cup of that pasta water and pour it in there, along with the juice of one lemon.


Take the pasta directly out of the water and put it in the pan, then add 3.5 oz of fresh grated parmesan. You can use the canned parmesan as well if that is all you have. Mix it quickly, in small batches, and over low heat so that the cheese melts smoothly and doesn’t get clumpy. This part usually takes me about 10 minutes. Don’t rush it.



At this point you will want to taste it, and add salt and pepper. I always like to add parsley as well, but that is purely for some color and is not required.
Once you have it mixed up, it should be a very smooth and creamy consistency. If not, add about 1/2 cup of pasta water at a time until it gets there.



This pairs well with some garlic bread and a salad or some fresh vegetables. If you want a protein, grilled chicken, shrimp or steak are great options!

Buttered Noodles
Ingredients
- 1 lb Fettuccini or any other type of long pasta any type of pasta will work, but the long types are preferred
- 1 tsp Chicken Flavored Bouillon
- Salt for the pasta water, as well as to add at the end of cooking
- 1 Stick (8 tbsp) Butter, salted or unsalted
- 6-7 Garlic Cloves, minced
- 1 Lemon, juiced
- 2-3 Cup Pasta Water take it from the pot of boiling pasta when it is nearly done
- 3.5 Oz Fresh Grated Parmesan Cheese
- Salt and Pepper to taste
- Parsley Optional, used for color
Instructions
- Get your pasta water boiling and add 1-2 tsp of salt and 1 tsp of chicken flavored bouillon. Cook just under al dente (take about 1 minute off of package directions for al dente.) Do not drain it when it is done.
- When the pasta has about 6 minutes of cooking time left, melt the butter in a skillet over low/medium heat.
- Add in the garlic and cook just until fragrant, about 1 minute, be very careful not to burn it.
- Stir in one cup of the pasta water along with the lemon juice.
- Add the pasta and the a little bit of the parmesan in. Stir it quickly so that the cheese doesn't clump up. Add the cheese a little at a time and do it over low heat. This will take about 8-10 minutes. Just be patient and don't rush this step.
- Add salt and pepper to taste, and parsley if desired.
- If the sauce is not a smooth, creamy consistency, add more pasta water in 1/2 cup at a time until it gets that way. Serve hot and enjoy!
