1lbFettuccini or any other type of long pastaany type of pasta will work, but the long types are preferred
1tspChicken Flavored Bouillon
Saltfor the pasta water, as well as to add at the end of cooking
1Stick (8 tbsp)Butter, salted or unsalted
6-7Garlic Cloves, minced
1Lemon, juiced
2-3CupPasta Watertake it from the pot of boiling pasta when it is nearly done
3.5OzFresh Grated Parmesan Cheese
Salt and Pepper to taste
ParsleyOptional, used for color
Instructions
Get your pasta water boiling and add 1-2 tsp of salt and 1 tsp of chicken flavored bouillon. Cook just under al dente (take about 1 minute off of package directions for al dente.) Do not drain it when it is done.
When the pasta has about 6 minutes of cooking time left, melt the butter in a skillet over low/medium heat.
Add in the garlic and cook just until fragrant, about 1 minute, be very careful not to burn it.
Stir in one cup of the pasta water along with the lemon juice.
Add the pasta and the a little bit of the parmesan in. Stir it quickly so that the cheese doesn't clump up. Add the cheese a little at a time and do it over low heat. This will take about 8-10 minutes. Just be patient and don't rush this step.
Add salt and pepper to taste, and parsley if desired.
If the sauce is not a smooth, creamy consistency, add more pasta water in 1/2 cup at a time until it gets that way. Serve hot and enjoy!
Notes
This dish is best eaten right when it is made. If you need to make a smaller portion, divide this recipe in half or fourths. If you have leftovers, I recommend reheating them in a pan on the stove, rather than in the microwave. Put it in a pan on the stove over low heat and warm up slowly, stirring frequently. You may need to add a little chicken broth or water as you do this. If you reheat it in the microwave, the butter will separate and sit on the bottom of the dish in the microwave. This dish does not freeze well in my experience. If you want some protein with it, grilled chicken, shrimp or steak are great options!
