Garlic Butter Steak Bites with Twice Baked Potatoes

This is technically 2 recipes in one, but since they paired so incredibly well with each other, I am giving you both in the same post. This is now one of my favorite meals. And to be honest, I was really worried about putting some expensive steak in the air fryer. But it turned out AMAZING! It was so tender and juicy, and cooked to the perfect temp of medium rare, which is what we like.

The garlic butter poured on it took this over the top! In my humble opinion, this is a dish that is worthy of being on a nice restaurant menu! Let’s start with the potatoes.

Unfortunately, I did not start filming or taking pictures until the potatoes were done. It was a Sunday evening, I was tired.

You probably can’t tell from the picture, but these potatoes were perfectly cooked with a nice and crispy skin and soft, fluffy inside.

I poked holes all throughout, rubbed them with some olive oil, sprinkled with salt and pepper and baked at 400 for about 1 hour. All ovens vary, so check for doneness after about 45 minutes.

Once they were cool enough, I scooped out the potato and put it in a large bowl. I then added steamed broccoli, minced garlic, melted butter, sour cream and grated sharp cheddar.

You can use a handheld mixer to mix these up, but I like the chunks so I used a fork.

After I had it all mixed up, I spooned it back into the potato skin boats as evenly as possible. Then I topped it with more cheese and finished them off in the air fryer.

I would have used the oven, but I had cleared up space in the air fryer and just decided to use it last minute.

They only need to be in there long enough for the cheese to melt!

Onto the steak! It is important to use an already tender cut of meat for this, as we are going to cook them quickly. I used New York strip, but ribeye, sirloin, or filet would also be great!

I trimmed the fat and cut into bite-sized pieces. I drizzled with olive oil and soy sauce and used a salt, pepper and garlic blend for seasoning. Then I gave them a good toss and let them come to room temperature.

Then you will preheat your air fryer to 400 degrees and lay the steak bites on the bottom in an even layer.

Be sure to flip them once while they are cooking to ensure they cook evenly and to also check the doneness. We like ours medium rare, and it took 8 minutes total.

For the garlic butter sauce, melt 1/2 stick of butter, and stir in 3-4 minced garlic cloves and some parsley. No need to measure the parsley, it is purely for looks!

Top your potato with some of the steak bites and drizzle that garlicky buttery goodness over the top and enjoy a steakhouse quality meal!

Garlic Butter Steak Bites and Twice Baked Potatoes

Twice Baked Potatoes

  • 2 Large Russet Potatoes
  • 1 Cup Steamed Broccoli
  • 2-3 Garlic Cloves, minced
  • 2 tbs Butter, melted
  • 1/2 Cup Sour Cream
  • 1 1/2 Cups Sharp Cheddar, grated

Garlic Butter Steak Bites

  • 2 New York Strip Steaks, or any cut of your choice
  • Olive Oil
  • Soy Sauce
  • Garlic and Herb Spice Blend
  • Salt and Pepper
  • 1/2 Stick Butter, melted
  • 3-4 Garlic Cloves, minced
  • Parsley

Instructions
 

Twice Baked Potatoes

  • Preheat oven to 400 degrees.
  • Wash the potatoes. Poke a few holes in them using a fork and wrap with foil. Bake for approximately 1 hour or until the insides are cooked.
  • When they are cool enough to handle, cut in half and scoop the insides into a bowl. Add the rest of the ingredients aside from 1/2 cup of the cheese. Mix together well.
  • Fill the potato halves with the mixture. Top with remaining cheese and air fry at 400 (or put back in the oven) until cheese is melted.

Garlic Butter Steak Bites

  • Cut the steaks into bite sized pieces. Drizzle with the olive oil, soy sauce and seasonings.
  • Air fry at 400 for 7-9 minutes, depending on how well you like your steak cooked. Be sure to flip around half way through.
  • Mix the melted butter, minced garlic and parsley.
  • When the steak bites are done, drizzle them with the garlic butter.
