Grilled Steak and Roasted Corn Salad

Salads are not my normal content even though I eat them a lot! But they are usually just a normal every day salad. You know, Iceberg lettuce, some veggies, maybe some cheese, croutons and dressing. The typical salad you get at a restaurant before your dinner comes! But I do like to get adventurous and I am always inspired by the beautiful salads I see on social media and even on TV! So today was one of those days that I decided to dig in my produce drawer and see what I could come up with. And let me just say OH MY GOSH!!! THIS Grilled Steak and Roasted Corn Salad WAS INCREDIBLE!!!! I am truly proud of myself for this one!! If it was on a restaurant menu, I would order it every time I was there! It is that good! It is full of veggies, roasted corn, grilled filet mignon, a cajun honey vinaigrette you will want to drink and more! Let’s get into it!

What you will need to make Grilled Steak and Roasted Corn Salad

  • Red Bell Pepper
  • Green Bell Pepper
  • Red Onion
  • Jalapeno
  • Corn on the Cob
  • Canned Black Beans
  • Avocado
  • Cilantro
  • Filet Mignon – or any other cut of steak or even chicken breast if you don’t eat red meat – or you can omit the meat altogether!
  • Salt and Pepper
  • Olive Oil
  • Limes
  • Honey
  • Cajun Seasoning

How to Make Grilled Steak and Roasted Corn Salad:

You will start by brushing 2 pieces of sweet corn with olive oil, then sprinkling them with salt and pepper and a dash of cajun seasoning. Put them in the air fryer at 400 degrees for about 12-15 minutes.

While the corn is cooking cut up the red onion and peppers into small uniform sized pieces. You want to chop up 1 or 2 avocados as well. I did not get a good picture of this process! Oops! Go ahead and chop up about a half a bunch of cilantro as well, if you like cilantro! If not, just omit it from the recipe!

When the corn is done, carefully use a sharp knife to remove the kernels from the cob.

For the Dressing:

To make the dressing, mix together 1/2 cup of olive oil, the juice of 1 lime, 1/3 cup of honey, 1 tsp of salt and about 1/2 tsp of cajun seasoning. I love this Slap Ya Mama but any will do!

For the steak, I simply marinated a couple 4 oz filets in olive oil and sprinkled them with salt and pepper. I cooked them in my cast iron skillet over a medium high heat until they were cooked to a medium temp. Then I cut them into bite sized pieces.

Lastly, I assembled everything in a bowl, poured the dressing over and gave it a really good mix! Then I dug in and enjoyed it thoroughly!!!

Grilled Steak and Roasted Corn Salad

An amazing salad filled with tender juicy steak, roasted corn, crisp veggies, and a cajun honey dressing you will want to drink!

Ingredients
  

Veggies

  • 1/2 Red Onion, diced
  • 1/2 Red Bell Pepper, diced
  • 1/2 Green Bell Pepper, diced
  • 15 oz Can of Black Beans, rinsed and drained
  • 1 Jalapeno, diced optional
  • 1-2 Avocados, diced
  • 1/2-1 Bunch Cilantro, finely chopped

For the Corn

  • 2 Ears of Fresh Corn on the Cob
  • Salt and Pepper
  • Cajun Seasoning

For the Dressing

  • 1/2 Cup Olive Oil
  • 1/3 Cup Honey
  • 2 Limes, juiced
  • 1 tsp Salt
  • 1/2 tsp Cajun Seasoning

For the Steak

  • (2) 4 oz Filet Mignons (or any other tender cut of steak) if you prefer chicken, that would be great too! Or you can omit the meat all together!
  • 1 tsp Olive Oil
  • Salt and Pepper

Instructions
 

  • Brush the corn with olive oil, and sprinkle with salt and pepper and a small amount of cajun seasoning. Air fry at 400 for about 12-15 minutes or you can grill at 375 for about the same amount of time.
  • Chop all of the vegetables into small uniform pieces and put them into a large bowl.
  • Mix the dressing.
  • Rub the steak with the olive oil and season with salt and pepper. Heat a cast iron skillet or a grill to medium/high heat and cook to desired doneness. Chop into bite sized pieces.
  • Assemble the salad and pour the dressing over it. Toss well. Enjoy right away!
