Veggies
1/2Red Onion, diced
1/2Red Bell Pepper, diced
1/2Green Bell Pepper, diced
15ozCan of Black Beans, rinsed and drained
1Jalapeno, dicedoptional
1-2Avocados, diced
1/2-1BunchCilantro, finely chopped
For the Corn
2Ears of Fresh Corn on the Cob
Salt and Pepper
Cajun Seasoning
For the Dressing
1/2CupOlive Oil
1/3CupHoney
2Limes, juiced
1tspSalt
1/2tspCajun Seasoning
For the Steak
(2)4 ozFilet Mignons (or any other tender cut of steak)if you prefer chicken, that would be great too! Or you can omit the meat all together!
1tspOlive Oil

Instructions
Brush the corn with olive oil, and sprinkle with salt and pepper and a small amount of cajun seasoning. Air fry at 400 for about 12-15 minutes or you can grill at 375 for about the same amount of time.
Chop all of the vegetables into small uniform pieces and put them into a large bowl.
Mix the dressing.
Rub the steak with the olive oil and season with salt and pepper. Heat a cast iron skillet or a grill to medium/high heat and cook to desired doneness. Chop into bite sized pieces.
Assemble the salad and pour the dressing over it. Toss well. Enjoy right away!
