Not only are these cookies absolutely beautiful, but they are absolutely delicious. And super easy to make! They require only 4 ingredients! Say what? I love to bake, but I do not do it often, but when I find a recipe this easy, you can bet I will be at the store getting the ingredients! I will be making several batches of these over the next few days to give to friends. That is how easy they are!
What are the 4 ingredients?
- 1 box of strawberry cake mix (or any other flavor you like)
- 1/2 cup of white chocolate chips
- 1/3 cup of vegetable oil
- 2 eggs (ignore the 3rd egg in the picture, he snuck his way in there somehow)
All you have to do is mix the cake mix, the eggs and the oil. It is going to be really stiff and will take some elbow grease if you are doing it by hand, but a hand mixer or stand mixer would be just fine too.
Now stir in 1 cup of the white chocolate chips. Since the dough is so sticky, it might be tough to get the chips to stay in the dough. I just pushed them in there as I was rolling the dough into balls.
I recommend using a cookie scooper but mince just happened to break, so I just tried to make them as evenly sized as possible!
Place them on a parchment lined baking sheet for easy cleanup!
Baking times will vary based on the size of your cookies. I made mine a bit larger than what a standard cookie scoop size would be and they took about 12 minutes.
They are finished when they just start to get slightly brown on the edges.
Let cool on a wire rack. And if you are anything like me, that will be about a minute because a hot cookie out of the oven is one of the best things ever!
I did sprinkle mine with red dusting sugar, but it didn’t stick well so I would skip this part next time.
Valentine Cake Cookies
Ingredients
- 1 Box Strawberry Cake Mix any flavor will work
- 2 Eggs
- 1/3 Cup Vegetable Oil
- 1 Cup White Chocolate Chips
- Red Sprinkles optional
Instructions
- Preheat oven to 350 degrees.
- Mix together the 1st three ingredients.
- Add in the chocolate chips.
- Roll into balls and place on parchment lined baking sheet.
- Bake for 9-12 minutes. They will be done when the edges just slightly start to turn brown.
- Cool on a wire baking rack.
