Creamy Bacon and Garlic Smothered Pork Chops

Sometimes the inspiration to come up with a new recipe will just hit me, and these smothered pork chops were absolutely incredible! I usually like my pork chops on the grill but we were having a snow storm so that was out of the question. This is definitely a rich and decadent dish, but the flavors came together so beautifully that it will definitely be a new item on our dinner rotation. I made some garlic mashed potatoes (which you can find the recipe for here: creamy-garlic-mashed-potatoes )to accompany it and some green beans and this was a very enjoyable meal!

What kind of pork chops do you need for this?

You can use any kind you like, but I would honestly recommend a boneless, thick cut pork chop. Even with the crazy cost of groceries today, my grocery store always seems to have a good sale on these. But if you prefer a different cut, feel free to use any, just make sure to cook them to an internal temp of 145 degrees. The first thing you will do is fry up about 8 slices of bacon with a diced yellow onion. Once the bacon is crispy, remove from the pan with a slotted spoon and set aside.

Next, you will season your pork chops with a salt, pepper and garlic blend. I used this one from Traeger. I found it at my local grocery store and really like it, but you can use whatever seasoning you like. Make sure to season both sides.

Melt a tbs of butter in the pan and cook your pork chops until they reach an internal temp of 145. When they are finished, remove them and set them aside.

The Sauce

Be sure to have your heat set to a low, medium heat. This process goes quickly and you do not want anything to burn. Add in 6-7 minced garlic cloves and cook just until fragrant, about 1 minute.

Whisk in 1/4 cup of flour and let that cook down for 2-3 minutes.

When the flour is cooked down, whisk in 2 cups of low sodium chicken broth and 1 cup of heavy cream. You want to whisk it until it is smooth and creamy and just starting to bubble and thicken up!

Add in 1/2 cup of some fresh parmesan and once the cheese is completely melted, stir the bacon and onions back in. I recommend tasting it at this point and if needed, season with a bit more salt and pepper.

Add the pork chops back to the pan and spoon some gravy over each one. Garnish with some fresh parsley for a pop of color if desired.

Ingredients
  

  • 4-6 Thick Cut Boneless Pork Chops
  • 6-8 Slices Bacon
  • 1 Yellow Onion, diced
  • 6-7 Garlic Cloves, minced
  • 2 tbs Butter divided
  • 1/4 Cup All Purpose Flour
  • 2 Cups Low Sodium Chicken Broth
  • 1 Cup Heavy Cream
  • 1/2 Cup Fresh Parmesan Cheese
  • Salt, Pepper and Garlic Blend for seasoning the pork chops
  • Salt and Pepper to taste if needed
  • Chopped Fresh Parsley, for garnish optional

Instructions
 

  • In a large skillet, over medium heat, brown the bacon and onion. Once the bacon is crispy, remove with a slotted spoon and set aside.
  • Season your pork chops with the salt, pepper and garlic blend or whatever seasonings you are using. Add a tbs of butter to the pan and cook the pork chops until they reach an internal temp of 145. Use a meat thermometer to be sure to not overcook them. Remove and set aside
  • Add the other tbs of butter to the pan. Whisk in the garlic and cook just until fragrant, about 1 minute.
  • Whisk in the flour and let it cook down for 2-3 minutes.
  • Whisk in the chicken broth and heavy cream. Be sure as you are doing this to scrape all the bits off the bottom of the pan.
  • Once the sauce has started to thicken, stir in the parmesan cheese. (You will need to constantly stir this or the cheese can get clumpy)
  • When your sauce is smooth and creamy, stir the bacon and onions back in. Add the pork chops back in and cover each one with some of the sauce. Garnish with parsley if desired.
