- Budget-friendly: Uses affordable ingredients you probably already have on hand.
- Comforting & nostalgic: A throwback to simple, hearty meals from childhood.
- Customizable: Swap the beef for turkey, the cheese for cheddar, or the soup flavor based on what’s in your pantry.

Ingredients
- 1 lb ground beef
- 1 medium yellow onion, diced
- 6 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tbsp salt-free garlic herb seasoning (like Mrs. Dash Garlic & Herb)
- 2 tbsp Worcestershire sauce
- 1 tsp beef bouillon (powdered or paste)
- ½ cup water
- 2½ lbs russet potatoes, peeled and chopped into bite-size pieces
- 2 tbsp olive oil
- 1 (1 oz) packet Lipton onion soup mix
- 1 (10.5 oz) can cream of mushroom soup (or any cream soup)
- ½ cup milk
- 2 tsp black pepper
- 2 cups shredded Colby Jack cheese (or your favorite melty cheese)
- 1½ cups crispy fried onions
Instructions:

This is just a summary, the full recipe is below! Start by heating a large skillet over medium heat. Add 1 pound of ground beef along with the diced onion and minced garlic. Then cook until the beef is browned and fully cooked through. Drain any excess grease.
Next, create a small well in the center of the pan and add the tomato paste. Let it cook for 2–3 minutes, stirring occasionally, until it deepens in color and caramelizes—this adds a richer depth of flavor.
Season the meat with the garlic herb seasoning, Worcestershire sauce, beef bouillon, and water. Stir well, reduce the heat to low, and let it simmer while you prepare the potatoes.

for the potatoes

Peel and chop 2½ pounds of russet potatoes into evenly sized bite-size pieces. I love using this veggie chopper to make sure they are equal sizes! To speed up the bake time, place the potatoes on a microwave-safe plate and microwave them for 8 minutes. Alternatively, you can parboil them in salted water for about 5 minutes.
Once tender, toss the hot potatoes in a 9×13-inch baking dish with olive oil and the packet of onion soup mix. Stir well to evenly coat.

Spoon the seasoned meat mixture evenly over the potatoes in the baking dish.
In a separate bowl, whisk together the cream of mushroom soup, milk, and black pepper. Pour this mixture evenly over the beef and potatoes.
Cover the dish tightly with aluminum foil and bake at 375°F for 35 minutes.

Lastly

After 35 minutes, remove the foil. Sprinkle 2 cups of shredded Colby Jack cheese over the top, followed by a generous layer of crispy fried onions.
Return the casserole to the oven, uncovered, and bake for another 7–10 minutes, or until the cheese is melted, the onions are golden, and the edges are bubbling.

Let the casserole sit for 5 minutes before serving. I love pairing it with green beans and buttered white bread—just like we did when I was growing up.

Notes
Variations & Tips
- Use what you have: Ground turkey or chicken works just as well as beef.
- Mix up the cheese: Try cheddar, Monterey Jack, mozzarella, or even pepper jack.
- Pick your soup: Cream of chicken, celery, or cheddar cheese soup can all be used here.
- Watch the salt: Onion soup mix, bouillon, and cheese all add salt, so choose salt-free or low-sodium seasonings when possible.
- Leave the peel on: If you like rustic texture, you can skip peeling the potatoes.

Hi! This may be a dumb question, but can I use red potatoes instead of russet or yellow potatoes for the Cheesy French Onion Hamburger Casserole?
You can use any kind you like!
I am going to make this tomorrow but I don’t have tomato paste. I am going to try using 2 tsp ketchup in its place. Will come back and let you know how it works out. 😊
I think that should work just fine! I am eager to hear!
Came back to say it turned out yummy even using ketchup instead of tomato paste. 😊 Thank you!
