How To Make Banana Chocolate Chip Mini Muffins

Start by mashing one large banana in a medium sized bowl. You want it to have a pudding-like consistency.

Pioneer Sweet Cream Baking Mix

Stir in one (6oz) package of this Pioneer Sweet Cream Baking Mix, along with 3/4 cup of water. Then stir in 1/2 cup of miniature chocolate chips.

Fill up a mini muffin tray with the batter, then top with a few extra chocolate chips.

Bake at 375 degrees for approximately 15 minutes. Allow them to cool and enjoy!

I was able to get about 32 muffins from one batch!

These little muffins are perfect for an easy breakfast or a sweet treat! They are made with only a few simple ingredients, but packed with lots of yummy flavor!

Ingredients
  

  • 1 Large Ripe Banana
  • 1 (6 oz) Package of Pioneer Sweet Cream Baking Mix
  • 3/4 Cup Water
  • 1/2 + 2-3 tbsp Miniature Chocolate Chips

Instructions
 

  • Preheat your oven to 375 degrees
  • In a medium-sized mixing bowl, mash the banana, then add in the rest of the ingredients
  • Fill a mini muffin pan with the batter and place a few extra chocolate chips on each one.
  • Bake for approximately 15 minutes or until cooked through. Allow them to cool and enjoy!

Notes

Store these in the fridge in an airtight container for up to 4 days.
Store them in the freezer in an airtight container for up to 2 months.
To heat them up, microwave them by 10 second increments until they are your desired temperature. 
Feel free to use any flavor of baking chips that you like for a different flavor!
