  • Green beans stay tender with a slight snap

Ingredients You’ll Need

  • Smoked turkey leg (about 2.15 pounds)-The star of the dish, bringing rich, smoky flavor and fall-apart tender meat.
  • Red potatoes (2½ pounds, roughly chopped)-Hearty enough to hold up to slow cooking without turning mushy.
  • Fresh green beans (1 pound, ends trimmed)-Left whole for the best texture.
  • Onion (1, diced)-Adds sweetness and depth to the base.
  • Garlic (4–5 cloves, minced)-Enhances the savory flavor.
  • Low-sodium chicken broth (½ cup)-Adds moisture without making the dish soupy.
  • Butter (4 tablespoons / ½ stick, sliced)-Adds richness and helps flavor the vegetables.
  • Mrs. Dash salt-free onion & herb seasoning-Keeps seasoning bold without extra salt.
  • Black pepper-Adds mild warmth.
  • Brown sugar (1 tablespoon)-Balances the smoky, savory flavors.
  • Optional for serving: cornbread and hot sauce

How to Make Crockpot Smoked Turkey, Potatoes, and Green Beans

Place the smoked turkey leg in the bottom of a 6-quart slow cooker. Scatter the diced onion and minced garlic around the turkey, then pour in the chicken broth to create a flavorful base.

Arrange the chopped red potatoes around the turkey leg. Season them generously with Mrs. Dash salt-free onion and herb seasoning so they’re well coated.

Layer the fresh green beans on top of the potatoes, leaving them whole with just the ends trimmed. Dot the green beans with the sliced butter, then season again with Mrs. Dash and a little black pepper. Sprinkle the brown sugar evenly over the top.

Cover and cook on LOW for 6 hours (about 93°C), until the turkey is extremely tender, the potatoes are soft but still holding their shape, and the green beans are tender with a slight snap.

Once cooking is complete, carefully remove the turkey leg. Discard the skin, bones, and tendons, then shred the meat — it should fall apart easily. Stir the shredded turkey back into the crockpot with the potatoes and green beans until everything is well combined.

My favorite way to serve it is with hot honey cornbread on the side and you gotta have some hot sauce! If you want 🙂

Tips for Success

  • Use a large smoked turkey leg for the best meat yield
  • Keep the broth amount low so the dish doesn’t become soupy
  • Leaving green beans whole helps them maintain texture
  • Smoked turkey provides plenty of salt, so salt-free seasoning works best
  • Cut potatoes evenly for consistent cooking

Easy Variations & Substitutions

  • Use smoked turkey wings or necks instead of a leg
  • Swap red potatoes for yellow or gold potatoes
  • Add a pinch of red pepper flakes or Cajun seasoning for heat
  • Stir in smoked paprika for extra smoky flavor
  • Add carrots and celery for more vegetables

Make-Ahead & Storage

  • Store leftovers in an airtight container in the refrigerator for 3–4 days
  • Reheat gently in the microwave or on the stovetop
  • Freezing is not recommended, as the potatoes and green beans may lose texture

This is simple, delicious and perfect for a cold winter day. It is VERY hearty and solved my quandary of what to do with the appealing turkey legs I’d seen in the butcher’s case for years! I used frozen whole green beans that I thawed by running under lukewarm water for a bit before adding. I would suggest starting with just 1 TB of Mrs. Dash and adding more later if desired. Thanks for the nice meal.
