Loaded Breakfast Casserole

The reason I decided to call this “loaded” breakfast casserole is that it is loaded up with plenty of your favorite breakfast foods! Hash browns, bacon, sausage, ham, eggs and cheese! This is perfect for Christmas morning or any time you will be feeding a crowd. It serves 12-15 people and can be prepped the night before. It also freezes well, so it could be used for meal prepping.

You can also easily customize this dish. You can add any kind of veggies you like as well as omit any meat you don’t want in there. If you can’t find the hash brown patties, tater tots are a great alternative!

To start, you will place 10 of the hash brown patties in a greased 11×13 baking dish. I like to keep them in the oven while preparing everything else to ensure that they are crispy. The oven temp will be 400 degrees.

When you have everything ready, you will start layering. I used 1 lb of breakfast sausage.

Then I spread on 8 oz of chopped up deli ham. You can also but packages of cubed ham and that would work great too!

And then I added 1 lb of cooked crumbled bacon. The bacon I cooked in the oven at 400 for about 20 minutes. It comes out perfect every time!

Next, you will crack 12 eggs into a large bowl. Add 1 cup of milk and season how you like, but I used garlic and onion powder, some slap ya mama, black pepper and just a little salt. The meat in this dish provides a lot of salt.

Whisk the eggs together really well then pour over the casserole. Cover tightly with foil and bake for 30 minutes.

After 30 minutes, remove the foil and top with mozzarella and sharp cheddar, or any kind of cheese that you prefer!

Then it goes back in the oven for about 15-20 minutes!

I like to serve with warm biscuits or toast and some fruit!

Ingredients
  

  • 10 Frozen Hash Brown Patties
  • 1 lb Breakfast Sausage, cooked, crumbled and drained
  • 8 oz Deli Ham, chopped prepackaged cubed ham will also work
  • 1 lb Bacon, cooked and crumbled
  • 12 Eggs
  • 1 Cup Milk
  • 1/2 Cup Shredded Mozzarella Cheese
  • 1.5 Cups Shredded Sharp Cheddar Cheese

Seasonings

  • 1 tbs Garlic Powder
  • 1 tbs Onion Powder
  • 1 tbs Black Pepper
  • 1 tbs Slap Ya Mama optional
  • 1/2 tsp Salt

Instructions
 

  • Preheat oven to 400 degrees
  • Grease a 9×13 baking dish and add the hash brown patties on the bottom. I like to go ahead and stick them in the oven while I am preparing everything, but this is not necessary.
  • Layer the sausage, ham and bacon on top of the hash browns.
  • Whisk together the eggs with the milk and the seasonings them pour them on top.
  • Wrap tightly with foil and bake for 30 minutes.
  • Remove the foil then add the cheeses and bake for about 15-20 more minutes.
  • Serve hot and enjoy!

Notes

This recipe can be prepared the night before. Just assemble and cover and keep in the fridge until ready to bake. 
This freezes really well. Bake it, let it cool then wrap with plastic wrap and aluminum foil. When ready to make, take it out of the freezer 1-2 days in advance and let thaw in the refrigerator. Reheat in the oven for about 20 minutes or until warmed completely through. 
You can add any variety of vegetables and use any variety of meats and cheeses. Customize it to suit your family’s tastes. 
This is also really good with tater tots instead of the hash brown patties!
