Chicken Bacon Ranch Tater Tot Casserole

This casserole is not only a hit with kids but also a favorite among adults, making it a fantastic choice for family dinners or gatherings. By using a rotisserie chicken, you infuse the dish with rich flavors without the fuss of cooking chicken from scratch. Plus, you can easily customize it by swapping out the broccoli for other vegetables like asparagus or zucchini—or even omitting it altogether!


Ingredients:
- 4-5 cups cooked rotisserie chicken, shredded (or any cooked chicken)
- ½ pound cooked crumbled bacon
- 12-ounce bag of steamed broccoli, chopped (or substitute vegetable of choice)
- 2 jars (15 ounces each) Alfredo sauce
- ¼ cup milk (⅛ cup for each jar of sauce)
- ½ cup grated Parmesan cheese
- 8 ounces shredded mozzarella cheese
- 28-ounce bag of tater tots
- Seasonings: garlic powder, onion powder, black pepper, red pepper flakes (to taste)
Instructions:

Start by preheating your oven to 425°F (220°C). This ensures that your casserole will bake evenly and the tater tots will become crispy. Spread the 28-ounce bag of tater tots on a baking sheet. Bake them for about 10 minutes, just enough to start the cooking process and get a head start on their crispiness. And if you can find this brand of tater tots I highly recommend them! They are so good!


In a 9 x 13 baking dish, add the shredded rotisserie chicken. Next, mix in the crumbled bacon and chopped broccoli (or your chosen vegetable). Take the two jars of Alfredo sauce and add an eighth of a cup of milk to each. Shake the jars well to combine and get every bit of sauce out. Pour the sauce over the chicken mixture.
Sprinkle in garlic powder, onion powder, black pepper, and red pepper flakes to taste. Then, add the grated Parmesan cheese and stir everything together until well combined.





Top the mixture with 8 ounces of shredded mozzarella cheese. Finally, layer the partially baked tater tots on top, creating a crispy finish. Place the assembled casserole back into the oven and bake for about 35 minutes, or until the tots are golden brown and crispy, and everything is heated through.



Once out of the oven, let the casserole cool for a few minutes before serving. This is a hearty dish on its own and I do not serve it with anything. But a nice salad or garlic bread would go well with it!

- 8 oz Shredded Mozzarella Cheese
- 28-30 oz Bag of Frozen Tater Tots
Seasonings
- Garlic Powder, Onion Powder, Black Pepper, Red Pepper Flakes approximately 1 tsp each, but only a pinch of the red pepper flakes
Instructions
- Preheat the oven to 425°F (220°C).
- Bake the tater tots on a baking sheet for about 10 minutes.
- In a 9×13 baking dish, combine shredded rotisserie chicken, crumbled bacon, and chopped broccoli.
- Pour in the alfredo sauce, then add the milk in each jar and shake it up to get all of the sauce out.
- Season with garlic powder, onion powder, black pepper, and red pepper flakes. Stir in the grated Parmesan cheese.
- Top with shredded mozzarella cheese and the partially baked tater tots.
- Bake for 35 minutes, until the tater tots are golden brown and everything is heated through.

Yummy, hearty dinner! I baked two large chicken breasts with seasoning salt, used homemade Alfredo sauce and a bit of Italian seasoning. Will definitely make again.
