Jalapeno Chicken

Jalapeno Chicken is a popular dish at many takeout restaurants and it is one of my personal favorites! I love jalapenos so much I can just eat them plain! Even if you aren’t a fan of spicy foods, this dish can easily be tamed. Just a few simple modifications and this can be a dish that anyone will enjoy!

How to Make Jalapeno Chicken

This is just a summary. The full recipe is below. Start by mixing the ingredients for the sauce. It consists of soy sauce, rice vinegar, minced garlic, brown sugar, honey and red pepper flakes.

Cut up 2 lbs of boneless, skinless chicken thighs into bite-sized pieces. (You can use breasts also.) Season with salt and a lot of black pepper. Mix with 1/4 cup of cornstarch.

Heat 2 tbsp of oil in a large skillet over medium high heat and thoroughly cook the chicken. This should take 7-8 minutes. Remove it and set it aside.

Jalapeno Chicken

In the same pan, add 1 diced onion and 3 sliced jalapenos. Cook them until slightly soft, about 5-7 minutes. Add the chicken and the sauce in and stir well. Cook over low heat until the sauce has thickened up. Serve over rice or noodles and enjoy!

Jalapeno Chicken

I love to serve this over rice with a side of sauteed green beans and some egg rolls. It is also great over sesame noodles!

Jalapeno Chicken

Jalapeno Chicken is crispy fried chicken, smothered in a thick, sweet and spicy sauce that is so flavorful and almost as good as your favorite takeout!

Ingredients
  

For The Sauce

  • 1/4 Cup Soy Sauce
  • 3 tbsp Rice Vinegar or white vinegar
  • 1/8 Cup Water
  • 1 tbsp Minced Garlic
  • 1/4 Cup Brown Sugar
  • 2 tbsp Honey
  • 1/2-1 tsp Red Pepper Flakes

For the Chicken

  • 2 lbs Boneless, skinless chicken thighs, cut into bite-sized pieces breasts are fine too, but don't overcook them
  • Salt and Pepper
  • 2 tbsp Oil just use an oil with a high heat point, like vegetable or canola or avocado
  • 1/4 Cup Cornstarch
  • 1 Yellow Onion, Diced
  • 1-3 Jalapenos, sliced remove the seeds and membranes for it to be less spicy

Instructions
 

  • In a bowl, mix together the ingredients for the sauce and set it aside.
  • In a medium bowl, season the chicken with a small amount of salt and a lot of black pepper. I didn't measure, just make sure it is well seasoned. Add in the cornstarch and mix well.
  • Heat the oil in a skillet over medium high heat. Cook the chicken, turning occasionally until it is completely done. Remove it and set it aside.
  • In the same pan, add the onions and jalapenos. Cook until slightly soft, about 5-7 minutes.
  • Stir in the chicken and the sauce and mix well. Cook over low heat until the sauce is thickened up and it is ready to serve!

Notes

This can be made ahead and stored in an airtight container in the fridge for up to 4 days! 
I have not tried freezing it, but I would vacuum seal it and freeze it for up to 3 months. 
If you want it less spicy, discard the membranes and seeds from the jalapenos. For more heat, add more jalapenos or use hotter peppers, such as serrano’s or habaneros.
