Reuben Sliders are the perfect appetizer for your St. Patrick’s Day parties! They are easy to assemble, take very few ingredients and are absolutely delicious! Not only are they great for St. Patrick’s Day, but are wonderful for any time you need an easy appetizer. They have all of the ingredients of a traditional Reuben sandwich, except the Rye bread. These are a huge hit every time I make them and if you like Reubens, I can guarantee you will love these as well!
Typically, where I live, corned beef goes on sale this time of year. If you want to use fresh corned beef that is great! I find that it is easier to get the sliced corned beef at the deli section!

What are Reubens?
Despite their association with St. Patrick’s Day, Reubens are actually an American creation. They consist of corned beef, Swiss cheese, sauerkraut and Russian or Thousand Island dressing on Rye bread. These delectable sandwiches can be found on many menus across the United States!
What ingredients are needed for Reuben Sliders?
- King’s Hawaiian rolls or any type of similar rolls
- Deli sliced corned beef, or leftover, roasted corned beef
- Swiss cheese
- Sauerkraut – be sure to drain it and squeeze as much excess moisture out to avoid soggy sliders
- Thousand Island Dressing
- Butter
- Garlic Powder
- Worcestershire Sauce
- Everything Bagel seasoning, or plain poppy seeds
How to make Reuben Sliders
To begin, you will slice the rolls in half lengthwise. Place the bottom rolls in the oven safe tray that comes with the rolls. Then spread on a thin layer of the Thousand Island Dressing.
You will then place the corned beef in a layer on top of the dressing, followed by about 6 slices of the cheese. Then top the cheese with the sauerkraut, and add another layer of dressing.
Once they are assembled, melt the butter and mix in the garlic powder and Worcestershire sauce. Brush liberally on the tops of the rolls. Sprinkle with the Everything Bagel seasoning and cover with foil. Bake in a 350 degree oven for approximately 20 minutes.
When they are finished cooking, remove the foil and let cool slightly. Slice them up and enjoy!

Reuben Sliders
Ingredients
- 12 King's Hawaiian Original Sweet Rolls
- 8 oz Deli Sliced Corned Beef
- 1-2 Cups Thousand Island or Russian Dressing
- 8 oz Sauerkraut, drained, with the excess moisture squeezed out
- 12 slices Swiss Cheese
- 2 tbs Salted Butter
- 1 tsp Garlic Powder
- 1 tsp Worcestershire Sauce
- 1-2 tbs Everything Bagel Seasoning
Instructions
- Preheat the oven to 350 degrees
- Slice rolls in half lengthwise and place bottom rolls in the oven safe tray
- Spread on a thin layer of the dressing and then top with the corned beef and six slices of cheese
- Spread on the sauerkraut, then more of the dressing and 6 more slices of cheese. Place the top rolls back on.
- Melt the butter and mix in the garlic powder and Worcestershire sauce.. Liberally brush the tops of the rolls with the butter mixture.
- Sprinkle on the Everything Bagel seasoning, and cover with foil
- Bake for approximately 20-25 minutes or until heated through

Made these with my 11yo son, he actually helped me. Super easy to make, love that I can do it right in the rolls tray. Steps are very easy to follow on this page, well done, simple, and photos help a lot. thank you. I accidentally mixed the bagel seasoning in with the butter mix, but it seemed to be alright, my son didn’t notice. They were slippery when first cut, so a little hard to handle, and the bottom was soggy but I think I put too much butter on. My son actually loved them, and he is critical! I took the leftovers and put them upside-down on the foil, in a Tupperware box. Then, the next day I lifted the whole foil out, layed it on a pan and warmed them up and they were BETTER than before! bravo!!!!

Can these be prepared the day before?

I do not recommend it as they will get very soggy. I actually recommend you make them no more than about 1 hour ahead of time for the best results.

I prefer BOAR’S HEAD fresh sauerkraut. It tastes So Much better than canned! It’s in the fresh foods area near the butcher shop. Ask Deli manager where to find it.

I can’t say for sure because I have not tried it, but I would be worried that the rolls would get soggy if you prepare them too far in advance!

Made these for a party, but used the family size 24 bun pack because finger foods 8 PM party. Just needed extra cheese and shredded the meat to stretch it.
