These stuffed breakfast biscuits are a fun and delicious way to put a spin on breakfast! You can get creative and use whatever filling you like. I used cheddar cheese, bacon and eggs. I made a sausage gravy to dip them in and they were a huge hit with my family. These would be perfect for the holidays when you are having overnight guests, but they are also perfect for a weekend breakfast with the family! Start by cooking 7-8 slices of bacon. You can use any method you like, but I prefer baking mine. Just place on a parchment lined cookie sheet (make sure it has raised edges!) and bake at 400 for about 20 minutes.
Once cooked, drain on paper towels and crumble it up. I have found that just breaking it up in the paper towels works great!
Next you will whisk together six eggs.
Scramble in a skillet with a tbs of butter and cook just until slightly undercooked. Immediately remove from the heat and set aside.
You can use whatever type of biscuits you like but I prefer the Pillsbury grands. They are large enough to hold the filling and also I love the way they taste.
Flour your work surface and rolling pin and roll them out to about 5 inches in diameter.
Fill with a heaping tbs of cheddar cheese
Add a spoonful of the eggs.
Then top with some of the bacon crumbles.
Carefully fold the seams up and pinch together tightly.
Form into balls.
Place in a greased baking dish, brush with melted butter, sprinkle a little more cheese on and some dried parsley. (the parsley is purely for looks and is optional if you don’t have it)
Bake at 375 degrees for 30-35 minutes or until biscuits are completely cooked.

Ingredients
- 7-8 Slices Bacon
- 6 Eggs
- 1.5 Cups Shredded Cheddar Cheese
- 1 package Pillsbury Grands Biscuits, 8 count
- 2 tbs Butter, divided
- 2-3 tbs All Purpose flour, for dusting your work surface
- 1 tbs Dried Parsley, optional
Instructions
- Preheat oven to 400 degrees. Place your bacon on a rimmed cookie sheet lined with parchment paper and cook for about 20 minutes or until desired crispiness. Drain on a paper towel and crumble it up.
- Whisk together the eggs and cook in a skillet over medium heat in 1 tbs of the butter. Season with salt and pepper. Cook until slightly undercooked and set aside.
- Flour your work surface and rolling pin and roll the biscuits out to about 5 inches in diameter.
- Add a heaping tbs of the cheese to each one, followed with a spoonful of the eggs and some of the crumbled bacon. Carefully roll up the sides and pinch the seams together tightly. Form into balls.
- Reduce the oven temperature to 375 degrees. Place the biscuits in a greased baking dish and brush with 1 tbs of melted butter. Sprinkle a bit more cheese on top and some dried parsley. Bake for 30-35 minutes or until biscuits are completely cooked.
