Spinach Bacon and Ranch Pinwheels

The last time I made these Spinach Bacon and Ranch Pinwheels, I took them to my friend’s house for a small pool party. There were 4 of us girls and we devoured these! They are such a perfect snack for a hot summer day, but are also perfect for game day parties, or any party really! The filling is also delicious for stuffing into salmon or chicken, and you could also eat it as a cold or hot dip! Bottom line, these are delicious, and you must try! If you take these to a party, it would be a good idea to double the recipe as they will go quickly! You also might want to have the recipe ready to hand out!

Spinach and Artichoke Bread

Jalapeno Popper Dip

Start by browning ½ lb of chopped bacon until nice and crispy. Drain off all but about 1 tbs of the grease. I found this amazing little bacon grease cup on Amazon. I love it because it has a filter at the top to keep all the crumbly stuff out!

Rough chop an 8 oz. bag of spinach. Add the spinach to the pan with the bacon and grease and stir it until it is good and wilted down. This will not take long at all. Once the spinach is cooked down, remove from the heat, set aside and let cool.

In a mixing bowl, add ½ block of softened cream cheese and ½ cup of sour cream. Add 4 oz. of some fresh grated sharp cheddar cheese. (You can use any variety of cheese here, I just prefer sharp cheddar) and a packet of ranch seasoning mix.

Add in the spinach and bacon mixture. Mix until well incorporated. You can also use a hand mixer or even a spoon, this is just the quickest and easiest way!

These Mission Garden Spinach and Herb wraps are my favorite for these, but you can use any kind you like!

Spread a nice even layer of the mixture on the tortilla, making sure to get all the way to the edges!

Roll them up nice and tightly.

Cut into nice uniform sized slices.

I like to let them refrigerate for about an hour before serving because I like them nice and cold, but that is not necessary, just a personal preference. I hope that if you try these, you love them as much as I do!

Spinach Bacon Ranch Pinwheels

Ingredients
  

  • 1/2 lb Bacon
  • 8 oz Bag of Fresh Spinach
  • 1/2 Block Softened Cream Cheese
  • 1/2 Cup Sour Cream
  • 2 tbs Ranch Dressing Seasoning
  • 4 oz Freshly Grated Sharp Cheddar Cheese
  • 4 large Spinach Flavored Tortilla Wraps

Instructions
 

  • Chop up the bacon and fry until crispy. Drain on paper towels. Reserve 1 tbs of the grease left in the pan.
  • Roughly chop the spinach and cook it down in the bacon grease. This will only take a few minutes. Remove from the heat and let it cool
  • Put everything into a large mixing bowl and mix until well incorporated.
  • Spread the mixture evenly over the tortillas, making sure to get it all the way to the edges.
  • Roll them up tightly and cut into even size pieces, about an inch. Let them chill in the fridge for at least an hour before serving.
