Instructions
Chop up the bacon and fry until crispy. Drain on paper towels. Reserve 1 tbs of the grease left in the pan.
Roughly chop the spinach and cook it down in the bacon grease. This will only take a few minutes. Remove from the heat and let it cool
Put everything into a large mixing bowl and mix until well incorporated.
Spread the mixture evenly over the tortillas, making sure to get it all the way to the edges.
Roll them up tightly and cut into even size pieces, about an inch. Let them chill in the fridge for at least an hour before serving.
