Tamale Pie

This tamale pie is one of our absolute favorites! But it hasn’t been for very long! I was introduced to this dish through TikTok only about a year and a half ago. I saw it, I made it, and we all fell in love with it! After doing a few google searches, I discovered that it has been around for a long time, it was just never something that had been introduced into my life. Well, it is now, and I am ready to introduce it into yours! And keep in mind, this recipe feeds about 8-10 people, so if you do not like leftovers, or have a much smaller crowd to feed, it is very easy to cut it in half!

Preheat your oven to 400 degrees. Then, in a large bowl, you will mix two boxes of Jiffy corn muffin mix.

One cup of sour cream

2 cans of creamed corn

And 2 eggs

Mix together well and spread into a greased 11×13 baking dish.

Bake for about 30-35 minutes or until cooked through

While the cornbread is baking, brown 2 lbs of ground beef with a diced onion. Drain it, then add 2 packets of taco seasoning and 1 can of enchilada sauce.

Mix it together well. Let simmer for a few minutes or until it has thickened up.

When the cornbread is finished, use a fork to poke holes all throughout

Spread the taco meat mixture all over the top

Spread 2 cups of fresh grated sharp cheddar cheese and 1 cup of mozzarella on top. Put back in the oven for 15-20 minutes or until cheese is golden brown and bubbly.

I like to set out a variety of toppings so that everyone can have theirs exactly how they want. I will usually put out tomatoes, jalapenos, avocado,lettuce, sour cream, hot sauce, and Doritos. But the world is your oyster! Do whatever you like!

Equipment

  • 1 Skillet
  • 1 11×13 Baking Dish

Ingredients
  

  • 2 8.5 oz boxes Jiffy Corn Muffin Mix
  • 2 14.75 oz Canned Cream Corn
  • 1 Cup Sour Cream
  • 2 Eggs
  • 2 Lbs Ground Beef Chicken or Turkey will work too
  • 1 Yellow Onion, Diced
  • 2 Packets Taco Seasoning
  • 10 oz Can of Red Enchilada Sauce
  • 2 Cups Grated Sharp Cheddar Cheese
  • 1 Cup Grated Mozzarella Cheese
  • Any Desired Toppings Optional

    3. Spread into the baking dish and bake for 30-35 minutes or until cooked through
    4. While the cornbread is baking, brown the ground beef with the diced onion. Drain the grease, then add the taco seasoning and enchilada sauce. Mix well and let simmer for a few minutes until thickened up.
    5. When the cornbread is finished, use a fork to poke holes in the top.
    6. Spread the meat mixture on Top with the cheese and put back in the oven for 15-20 minutes or until the cheese is golden brown and bubbly.
    7. Serve hot and top with desired toppings. Enjoy!

      I think that should be perfectly fine! I probably wouldn’t put the meat mixture on until ready to bake though, so the cornbread doesn’t get soggy.

      Sorry for the late reply. I have never used the whole corn, but if you drain it, it should work!

    Very delicious, I only used 1/2 can of the enchilada sauce because it was spicy replaced the difference with water and it worked great.

        Omg! Love this recipe! We try to make it every few weeks. We like to add Rotel and black beans to the meat mixture.
