Ingredients
28.5 oz boxesJiffy Corn Muffin Mix
214.75 ozCanned Cream Corn
1CupSour Cream
2Eggs
2LbsGround BeefChicken or Turkey will work too
1Yellow Onion, Diced
2PacketsTaco Seasoning
10ozCan of Red Enchilada Sauce
2Cups Grated Sharp Cheddar Cheese
1CupGrated Mozzarella Cheese
Any Desired ToppingsOptional
Instructions
1. Preheat oven to 400 degrees and grease an 11x13 baking dish2. In a large bowl, combine the Jiffy mix, the corn, sour cream and eggs3. Spread into the baking dish and bake for 30-35 minutes or until cooked through4. While the cornbread is baking, brown the ground beef with the diced onion. Drain the grease, then add the taco seasoning and enchilada sauce. Mix well and let simmer for a few minutes until thickened up. 5. When the cornbread is finished, use a fork to poke holes in the top.6. Spread the meat mixture on Top with the cheese and put back in the oven for 15-20 minutes or until the cheese is golden brown and bubbly. 7. Serve hot and top with desired toppings. Enjoy!
