Tamale Pie

A classic casserole made with all of your favorite taco flavors on sweet cornbread!

Equipment

  • 1 Skillet
  • 1 11x13 Baking Dish

Ingredients

  • 2 8.5 oz boxes Jiffy Corn Muffin Mix
  • 2 14.75 oz Canned Cream Corn
  • 1 Cup Sour Cream
  • 2 Eggs
  • 2 Lbs Ground Beef Chicken or Turkey will work too
  • 1 Yellow Onion, Diced
  • 2 Packets Taco Seasoning
  • 10 oz Can of Red Enchilada Sauce
  • 2 Cups Grated Sharp Cheddar Cheese
  • 1 Cup Grated Mozzarella Cheese
  • Any Desired Toppings Optional

Instructions

  • 1. Preheat oven to 400 degrees and grease an 11x13 baking dish
    2. In a large bowl, combine the Jiffy mix, the corn, sour cream and eggs
    3. Spread into the baking dish and bake for 30-35 minutes or until cooked through
    4. While the cornbread is baking, brown the ground beef with the diced onion. Drain the grease, then add the taco seasoning and enchilada sauce. Mix well and let simmer for a few minutes until thickened up.
    5. When the cornbread is finished, use a fork to poke holes in the top.
    6. Spread the meat mixture on Top with the cheese and put back in the oven for 15-20 minutes or until the cheese is golden brown and bubbly.
    7. Serve hot and top with desired toppings. Enjoy!
