Knorr Spinach Dip Smothered Chicken Recipe

Sometimes an idea for a recipe just hits me. And the idea for this Knorr Spinach Dip Smothered Chicken came to me while I was deciding what to make for a party not long ago. I have always been a HUGE fan of the Knorr Spinach dip and I was considering taking that. Then I started wondering what it would taste like baked onto chicken with a melty mozzarella topping, so I had to try it. Well, let me tell you. IT IS DELICIOUS!!!!!

What will you need to make this Knorr Spinach Dip Smothered Chicken?

The ingredients are very simple. Here they are:

  • One Packet Knorr Vegetable Recipe Mix
  • 1 cup Mayonnaise
  • 1 cup Sour Cream
  • 8 oz can of water chestnuts (optional)
  • 10 oz bag of frozen, chopped spinach, thawed and drained
  • 4 very large chicken breasts (the ones I used were about 9 oz each)
  • 8 oz mozzarella cheese

To start, you will cut the chicken in half lengthwise. (You could also use smaller breasts or even precut tenderloins.) Thighs would also work great for this recipe. The grocery store had a sale on these breasts so this is what I had on hand.

Season both sides with salt and pepper, then over medium heat, brown in some oil for about 2-3 minutes per side. (We are not cooking them all the way through here. They will finish cooking in the oven.) Remove from the pan and set aside.

Is this step necessary?

Nope. I just like to brown the chicken to give it a little more flavor. You can simply season them with a little salt and pepper and skip browning them completely.

Now you will mix everything together for the dip. the mayo, sour cream, water chestnuts, spinach and seasoning packet. I was going to use a few red pepper flakes but forgot, but I think they would make a great addition! I

If you have made this dip before, you know it is the one that they used to print on the side of the packet seasoning!

Mix it up until it is smooth and creamy. And if you are at all like me, you will find whatever dipping foods you have in your house and start sampling! But try not to eat too much, we need it for the recipe!

Grate 8 oz of some fresh mozzarella.

Can you buy the pre-shredded stuff?

Absolutely! Even though I rarely buy the pre-shredded cheese, I have no problem using it. The reason I like to shred my own is that it melts so much better, tastes better and is a bit less expensive.

Also, this cheese grater makes it such a quick process! Enough about that though.

Place the chicken in a baking dish, then start spooning the spinach mixture on, then top it off with the cheese! Bake at 400 for approximately 20 minutes and that’s it!

Tip:

I STRONGLY recommend using a meat thermometer to make sure you cook your chicken to 165 degrees. That is when it is fully cooked. You also want to be careful to not go past 170 degrees. It starts to get dry at this point!

This really was a mouth-watering dish! I served it with baked sweet potatoes and garlic bread and all the flavors complemented each other really well. It would also go well with rice or a nice big salad! No matter what, I think you will truly enjoy this Knorr Spinach Dip Smothered Chicken! Knorr Spinach Dip Smothered Chicken

Juicy, tender chicken breasts filled with a spinach dip filling using a packet of delicious Knorr seasoning.

Ingredients
  

  • 4 8 oz Chicken Breasts
  • Salt and Pepper
  • 1 tbs Avocado oil
  • 1 Cup Mayonnaise
  • 1 Cup Sour Cream
  • 8 oz Water Chestnuts, finely chopped optional
  • 10 oz Bag of frozen spinach, thawed and drained
  • 1 Packet Knorr Vegetable Recipe Packet
  • 8 oz Freshly Grated Mozzarella

Instructions
 

  • Preheat oven to 400 degrees
  • Slice each chicken breast lengthwise and season both sides with salt and pepper.
  • In a skillet over medium heat, lightly brown in the avocado oil for about 2-3 minutes per side. remove and set aside
  • Mix the next 5 ingredients together.
  • Lay the chicken in a baking dish. Spoon some of the spinach mixture on each one then top with the cheese.
  • Bake for about 20 minutes or until cheese is completely melted and chicken is cooked to 165 degrees.

  • This recipe sounds delicious, but it’s so hot in Texas right now. I hate to think about using the oven. Do you think it would be possible to bake this in the air fryer after sautéing the cutlets on the stove?

      Hi! I am so sorry I was not able to answer your question right away. Mu husband and I were out of town for our wedding anniversary! If you did not go ahead and try it already, I think it would be perfectly fine to put it in the air fryer. I would probably just hold off on the cheese until the last couple of minutes to ensure the chicken gets fully cooked without the cheese getting burned! Let me know how it turns out!

      We really enjoy it with a baked sweet potato, but I think a regular baked potato would be great too! And a nice dinner salad is always a go-to for us as well! There are definitely plenty of options and you can’t go wrong! Please let me know what you think of the dish! Hope you love it! 🙂
