Sometimes my husband and I decide to skip the restaurant scene and enjoy a cozy date night at home instead. When we do, one of his absolute favorite meals for me to make is these garlic butter steak bites. They’re quick, packed with flavor, and feel restaurant-worthy without all the fuss. Served with my creamy garlic cheddar mashed potatoes, it’s the perfect dinner for two.

Ingredients & Substitutions
- Steak – I used two 8-ounce filet mignons, but sirloin, ribeye, or New York strip all work beautifully. Sirloin is a great budget-friendly option, while filet is a splurge.
- Olive oil – helps the seasoning stick and assists with the sear. Avocado oil works too.
- Seasonings – I used a steak blend along with garlic powder, onion powder, and black pepper. Feel free to use your favorite all-purpose blend or even just salt and pepper.
- Butter – I highly recommend a high-quality butter like Kerrygold for maximum flavor, but truly any butter will work.
- Garlic – fresh is best! I used about 7 cloves.
- Parsley – adds freshness and color, but you can swap in chives or thyme if you prefer.
Cooking Tips for Perfect Steak Bites
- Start with a hot skillet – medium-high heat with a very light oil coating ensures a beautiful sear without steaming.
- Don’t crowd the pan – if needed, work in batches so each piece gets that golden crust.
- Cook time is quick – steak bites only need about 3–4 minutes total for medium-rare.
- Toss in garlic butter at the end – this coats the steak without overcooking it.
Steak Doneness Guide
Use an instant-read thermometer for accuracy:
- Rare: 125°F
- Medium Rare: 130–135°F
- Medium: 140–145°F
- Medium Well: 150°F
- Well Done: 160°F+
Instructions

- Cut the steak – Trim and cut your steak into bite-sized cubes, about 1-inch pieces.
- Season well – Place steak cubes in a bowl, drizzle with olive oil, and season with steak blend, garlic powder, onion powder, and black pepper. Toss until evenly coated.





3. Sear the steak – Heat a large skillet over medium-high with a drizzle of avocado oil. Once hot, add steak bites in a single layer. Let them sear 1–2 minutes per side, until browned and cooked to your liking (about 3–4 minutes total for medium-rare). Remove and set aside.



4. Make garlic butter – In the same skillet, melt 4 tablespoons of butter. Add minced garlic and fresh parsley, cooking for 30–60 seconds until fragrant.




5. Coat and serve – Return steak bites to the skillet and toss in the garlic butter until coated. Immediately remove from heat so the steak doesn’t overcook. Serve hot.

Garlic Butter Steak Bites
Ingredients
- (2) 8 oz Filets or Sirloins, chopped into bite-sized pieces New York Strip or Flat Iron also work well but each will have a slightly different texture
- 1 tsp Avocado Oil just enough to coat the pan, you don't want the steak swimming in oil
- 2 tsp Steak Seasoning I use Kinders Steak Blend but whatever you like is fine
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/2 tsp Black Pepper
- 4 tbsp Kerrygold Butter or any good quality butter
- 6-7 Garlic Cloves, minced use less if you want, but we love a lot of garlic!
- 2 tbsp Chopped Fresh Parsley
Instructions
- Place steak cubes in a bowl. Drizzle with olive oil and season with steak seasoning, garlic powder, onion powder, and black pepper. Toss to coat.
- Heat a skillet over medium-high with a light coating of avocado oil.
- Add steak cubes in a single layer and sear 1–2 minutes per side, about 3–4 minutes total for medium-rare. Remove and set aside.
- Melt butter in the skillet. Add garlic and parsley, sauté 30–60 seconds until fragrant.
