Creamy Chicken, Sausage and Potato Stew (Slow Cooker)

There is nothing better on a cold, snowy day than a rich, hot, hearty meal in the slow cooker. My husband was called off work today due to a winter storm and I work from home. So I rounded up some ingredients from the fridge and pantry and threw together this ABSOLUTELY INCREDIBLE Creamy Chicken, Sausage and Potato Stew in the crockpot. It is LOADED with veggies and smoked sausage and chicken, and of course, cheese! I honestly think this might be the BEST thing I have ever created in my crockpot! I really wish the pictures could do it justice, but TRUST ME when I tell you this is amazing! Trust. Me!

My husband and daughter agreed with me, and even my youngest and pickiest eater said it was pretty good! If you knew him , you would know how big that is! And I do have plenty of other great crockpot meals that are worth checking out! What are the ingredients for Creamy Crockpot Chicken Stew?

  • Yukon Gold Potatoes – these are great because they hold their shape really well. Red potatoes will also work well, but if you only have Russets, they will be fine, but you will end up with a “mushy” stew
  • Celery
  • Carrots
  • Onion
  • Minced Garlic
  • Seasonings – I used Lawry’s Seasoning Salt, Kinder’s Buttery Steakhouse Blend, garlic powder, black pepper, and Herbs De Provence
  • Unsalted Butter
  • Boneless Skinless Chicken Breasts or thighs
  • Bacon
  • Smoked Sausage
  • Parmesan cheese
  • Chicken Broth
  • Heavy Cream and cornstarch – I forgot to include those in the picture!
  • *NOTE – I had originally planned to add bacon in the stew, but when it was finished I decided against it because it was already perfect! We did use a small amount as a topping but most of it went into the fridge for another use.

How do you make this Creamy Crockpot Chicken Stew

In your crockpot, you will add the potatoes, carrots, celery, onion and minced garlic. Following that you will add in the seasonings and the melted butter and give it all a good mix.

Next, In a skillet over medium heat add about 1 tsp of oil and brown up the smoked sausage. Remove and set aside. Season your chicken with salt and pepper and cook for sear for a couple minutes on each side just to brown them. We are not cooking them all the way through here.

Now you will stir the smoked sausage in, place the chicken on top and cover with 5 cups of chicken broth. Place the lid on and cook on low for 6-8 hours or high for 4-6.

And can I just say that at this point, your house is going to smell heavenly!!! When you take the lid off and the aromas really hit, you will think you can just stop here. And you probably could, but we’re not!

Remove the chicken and shred it up, or if you prefer you can cut it into chunks. Then you want to use a potato masher to mash just a few of the potatoes.

Make a corn starch slurry of 2 tbs cornstarch and 2 tbs water. Mix that in then add 1 cup of heavy cream as well as 5 oz of fresh grated parmesan. Mix well and add the chicken back in. Garnish with some dried parsley for color and let it sit for about 10-15 minutes on warm to thicken up.

Ingredients
  

  • 2.5 lbs Yellow Potatoes, roughly chopped
  • 3 Celery Stalks, diced
  • 4 Carrots, diced
  • 1 Yellow Onion, Diced
  • 6-7 Garlic Cloves, minced
  • 3 tbs Unsalted Butter, melted
  • 1 lb Smoked Sausage, sliced
  • 1 tsp Cooking oil
  • 1.5 lbs Boneless Skinless chicken breasts or thighs
  • 5 Cups Low Sodium Chicken Broth
  • 2 tbs Corn Starch + 2 tbs water
  • 1 Cup Heavy Cream
  • 1 Cup Parmesan, freshly grated

Seasonings

  • 2 tsp Lawry's Seasoning Salt
  • 1 tbs Kinder's Buttery Steakhouse Rub
  • 1 tbs Garlic Powder
  • 1 tbs Black Pepper
  • 1 tsp Herbs de Provence
  • Dried Parsley for garnish
  • Salt and Pepper to season the chicken

Instructions
 

  • Add potatoes, celery, carrots, onion and garlic to the slow cooker. Pour melted butter over the top and season with the spices listed above. Mix well.
  • In a skillet over medium heat, brown the sausage in about 1 tsp of oil. Once browned remove and set aside
  • Season chicken with salt and pepper. Brown in the skillet you used for the sausage for about 2-3 minutes per side.
  • Stir the cooked sausage into the crockpot, then place the chicken on top. Pour in the chicken broth.
  • Cover with the lid and cook on high for 4-6 hours or on low for 6-8 hours.
  • When finished, remove the chicken and either shred it or cut it up.
  • Use a potato masher to mash up a few of the potatoes.
  • Make a corn starch slurry by mixing the corn starch and water. Stir that into the crockpot, then stir in the heavy cream and parmesan cheese. Stir really well until all of the cheese is melted then add the chicken back in.
  • Allow it to sit on the warm setting for at least 10-15 minutes to thicken up.

      It is just a very close up picture. I am using a very small bowl and whisk. It is just 2 tbs though.

          Hi Kimberly! It is tablespoons. This is a very large batch of soup. If you feel more comfortable starting with less, that is what I always recommend! You can always add but you can’t take away. Hope you enjoy!

    In the recipe directions you mention an onion but in the recipe ingredient list there’s no onion listed nor how much to use.
