This taco hash brown casserole is a mixture of hash browns, taco meat, and lots of cheese topped with crunchy Nacho Cheese Doritos for an easy and delicious family meal!

Ingredients
For the Taco Meat
1.5lbsGround Beefor any ground meat that you prefer
1Yellow Onion, Diced
2tbspTaco Seasoning
3/4CupWater
For the Casserole
30ozBag of Frozen Hash Browns, partially thawed
10.5 ozCan of Campbell's Cheddar Cheese Soup
1CupSour Cream
10ozCan of Rotel (diced tomatoes and green chilies)
1tbspTaco Seasoning
8ozShredded Pepper Jack Cheesedivided in half
8ozShredded Sharp Cheddar Cheesedivided in half
9.25ozBag of Nacho Cheese Doritos (or any flavor you like)I use about half of it
Instructions
In a skillet over medium heat, brown the ground beef along with the diced onion. Once cooked, drain the excess grease. Add the taco seasoning and water, mixing well, and let it simmer on low heat.
Preheat the oven to 400°F (200°C).
In a large bowl, combine the partially thawed hash browns, cheddar cheese soup, sour cream, Rotel, additional taco seasoning, 1/2 of the pepper jack cheese, 1/2 of the sharp cheddar cheese, and the cooked taco meat. Mix until well combined.
Spread the mixture evenly in a 9 x 13 baking dish. Bake uncovered for 30-35 minutes.
Remove it from the oven and top with the other half of the cheeses and the crushed Doritos. Bake for about 5 more minutes or until the cheese is bubbly.
Once done, let the casserole cool for a few minutes before serving. Set out optional toppings like shredded lettuce, sour cream, diced tomatoes, sliced jalapeños, and hot sauce for everyone to customize their serving.
