Sweet and Spicy Pork Stir Fry

This Sweet and Spicy Pork Stir Fry is an incredibly delicious Asian-inspired dish that you can make in one pan and in less than 30 minutes!

Ingredients

  • 1/2 Cup Orange Juice
  • 1/4 Cup Soy Sauce
  • 2 tsps Sesame Oil
  • 2 tbsp Brown Sugar
  • 3-4 Garlic Cloves, minced
  • 1 tbsp Ginger Paste
  • 1/4 tsp Red Pepper Flakes
  • 1-2 tbsp Sriracha
  • 1 tbsp Cornstarch
  • 1 lb Ground Pork Sausage Beef, Turkey or Chicken will work too
  • 1 Yellow Onion, roughly chopped
  • 1 Large Zucchini, roughly chopped
  • 1 Red Bell Pepper, roughly chopped
  • 2 tbsp Avocado Oil

Instructions

  • Mix together the first 9 ingredients to make the sauce. Set it aside.
  • Add 1 tbsp of oil to a skillet over medium high heat. When it is hot, add in the sausage. Break it up slightly, leaving it in bite-sized chunks. Cook it quickly over the high heat because you want it to get slightly crispy. When it is cooked, remove it and set it aside.
  • Add another tbsp of oil to the pan, and the veggies. Cook them for 5-7 minutes or until desired tenderness.
  • Stir the sausage back in and then the sauce.
  • Cook, stirring the whole time, until everything is well coated in the sauce and the sauce has thickened up. Season with salt and pepper to taste if needed. Serve hot and enjoy!

Notes

You can substitute any veggies you like in this. 
Can be made ahead and stored in an airtight container in the fridge for up to 4 days. 
It can be frozen for up to 3 months. 
To reheat, I recommend putting it in the microwave 
If you don't tolerate spice very well, leave out the red pepper flakes and Sriracha sauce
