Preheat oven to 375°F / 190°C.
Brown sausage in a skillet, reserving 1 tablespoon for topping.
Add Canadian bacon, pepperoni, onions, peppers, and olives. Cook for 3–4 minutes.
Stir in marinara sauce and Italian seasoning. Simmer 5–10 minutes.
Mix ricotta, egg, Parmesan, and Italian seasoning in a bowl.
Spread ¼ of the sauce in a greased 9x13 dish.
Layer 3 noodles, half the ricotta, 1 cup mozzarella, and sauce.
Repeat with noodles, remaining ricotta, 1 cup mozzarella, and sauce.
Add final noodles, remaining sauce, and top with 2 cups mozzarella.
Cover with greased foil and bake 45 minutes.
Uncover, add reserved toppings, and bake 15–20 minutes more.
Rest 20 minutes before slicing and serving.
