Grandma's Old Fashioned Southern Style Potato Salad

A simple, yet delicious potato salad that has been passed down from generation to generation!

Ingredients

  • 2.5 lbs Russet Potatoes, peeled and washed and cut into even sized pieces or any kind of potatoes you prefer
  • 9 Hard-boiled Eggs, divided save 3 for garnish
  • 1.5 Cups Mayonaisse
  • 1/4 Cup Dijon Mustard
  • 1/4 Cup Sweet Pickle Relish
  • Salt and Pepper to taste
  • Paprika Optional as a garnish

Instructions

  • Boil Potatoes until fork tender, about 10-12 minutes. Drain and transfer to a large mixing bowl. Let them cool slightly for about 10 minutes
  • Add in the next 5 ingredients. Use a potato masher to mix them up but only to the point that everything is mixed together and there are still chunks of potato left. Add additional salt and pepper if needed.
  • Slice the remaining 3 hard-boiled eggs and place on top, then sprinkle with some paprika.

Notes

This can be stored in the fridge in an airtight container for up to 3 days.
I do not recommend freezing it as it will completely alter the taste and texture.
