1lbAndouille Sausage, slicedany type of smoked sausage will work
1.5lbsYukon Gold Potatoes, chopped into bite-sized pieces
1Yellow Onion, Diced
1/2Green Bell Pepper, diced
1/2Red Bell Pepper, diced
1/2Head of Cabbage, chopped up
Seasonings
Salt and Pepper
Garlic Powder
Slap Ya Mama Cajun Seasoningthis is optional if you do not like it spicy
Instructions
In a large skillet, brown the bacon over medium heat until crispy. Use a slotted spoon to remove it then set aside.
In the same pan, using the bacon grease, brown the sausage on both sides until nice and crispy on both sides then set it aside as well.
Add the potatoes, onions, and peppers. Season generously and cook for about 5-7 minutes.
Carefully add in the cabbage. You may need to stir in a little bit at a time until you have it all in there, but it will wilt down a lot.
Put the lid on, reduce heat to low/medium and cook for approximately 15 minutes or until the cabbage is your desired tenderness. Season again with the same seasonings and add the sausage and bacon back in.
