Ingredients

  • 10 Slices Bacon, chopped up
  • 1 lb Andouille Sausage, sliced any type of smoked sausage will work
  • 1.5 lbs Yukon Gold Potatoes, chopped into bite-sized pieces
  • 1 Yellow Onion, Diced
  • 1/2 Green Bell Pepper, diced
  • 1/2 Red Bell Pepper, diced
  • 1/2 Head of Cabbage, chopped up

Seasonings

  • Salt and Pepper
  • Garlic Powder
  • Slap Ya Mama Cajun Seasoning this is optional if you do not like it spicy

Instructions

  • In a large skillet, brown the bacon over medium heat until crispy. Use a slotted spoon to remove it then set aside.
  • In the same pan, using the bacon grease, brown the sausage on both sides until nice and crispy on both sides then set it aside as well.
  • Add the potatoes, onions, and peppers. Season generously and cook for about 5-7 minutes.
  • Carefully add in the cabbage. You may need to stir in a little bit at a time until you have it all in there, but it will wilt down a lot.
  • Put the lid on, reduce heat to low/medium and cook for approximately 15 minutes or until the cabbage is your desired tenderness. Season again with the same seasonings and add the sausage and bacon back in.
  • Stir it up well and it is ready to serve!
