Egg Roll In A Bowl

All the ingredients of a classic egg roll, made into a delicious one pot meal that comes together in less than 20 minutes!

Ingredients

  • 1 lb Ground Beef or chicken, turkey, sausage, etc
  • 1 Yellow Onion, Diced
  • 6-7 Garlic Cloves, minced
  • 1 tbsp Ginger Paste or 1 tsp dried ginger, or 1 tsp fresh ginger
  • 1-2 tsps Slap Ya Mama or any creole seasoning optional, only use if you want it a bit spicy
  • 14 oz Bag of Coleslaw Mix
  • 1/4 cup water
  • 1/8 cup Soy Sauce
  • 1/2 tsp Sesame Oil
  • 1/2 tsp Rice Wine Vinegar
  • 1/4-1/2 cup Hoisin Sauce
  • 1-2 tsps Green Onions, sliced

Instructions

  • Brown the ground beef with the onion in a large skillet over medium heat. Once it is fully cooked, drain the excess grease.
  • Add in the garlic and ginger. (Add in the Slap Ya Mama too if using it.) Mix well
  • Stir in the coleslaw mix and water. Let it cook down for a few minutes, stirring frequently.
  • Add in the remaining ingredients and let simmer on low until the veggies are your desired tenderness. Garnish with the green onions if desired. Serve hot and enjoy!

Notes

Feel free to customize this to your liking! Add as many veggies as you want! I really love to add riced cauliflower and sliced zucchini! If you want to make it stretch even further, add in some noodles or white rice. I have had people suggest serving wonton strips for some crunch, or even adding water chestnuts to it. The wonderful thing about this dish is that you can make it exactly how you like it!
This is great for meal prep and will last up to 4 days in the fridge. Store it in an airtight container. 
I do not recommend freezing this as it changes the texture of the vegetables too much for my liking.
