Creamy Tortellini with Smoked Sausage and Boursin Cheese

Ingredients

  • 1 tbsp Olive Oil
  • 14 oz Smoked Sausage, sliced
  • 1 Yellow Onion, Diced
  • 1 Green Bell Pepper, diced
  • 1 Red Bell Pepper, diced
  • 1 tbsp Veggie Seasoning Blend
  • 6-7 Garlic Cloves, minced
  • 1 Cup Chicken Broth
  • 1 Cup Heavy Cream
  • 5.3 oz Boursin Garlic and Fine Herbs Cheese
  • 19 oz Frozen Cheese Tortellini
  • 3 oz Shaved or Grated Parmesan
  • 1/2-1 tsp Red Pepper Flakes, optional
  • Salt and Pepper to taste if needed

Instructions

  • In a large skillet over medium heat, heat olive oil. Add smoked sausage and sauté until browned. Remove and set aside.
  • Add onion and bell peppers to the pan. Season and cook for 5 minutes until softened.
  • Stir in garlic and cook for 1 minute more.
  • Pour in broth and cream. Add Boursin cheese and stir until melted.
  • Add frozen tortellini. Bring to a boil, cover, reduce heat, and simmer for 8–10 minutes.
  • Uncover, stir in Parmesan and red pepper flakes. Return sausage to the pan and simmer until sauce thickens. Serve hot and enjoy!

Notes

Storage & Reheating Tips

  • Storage: Keep leftovers in an airtight container in the fridge for up to 3 days.
  • Reheating: Reheat gently in a skillet over low heat with a splash of broth or cream to loosen the sauce. Microwave reheating works too, but stir halfway through for even heating.
  • Note: The tortellini stays al dente when fresh, but will soften slightly as leftovers.
