Cheesy Sausage and Rotel Balls

These Cheesy Sausage and Rotel Balls are made with 5 simple ingredients and are always a huge hit at any gathering!

Ingredients

  • 1 lb Hot ground sausage, UNCOOKED
  • 8 oz package of cream cheese, softened to room temperature
  • 10 oz Can of Rotel tomatoes and diced chilies drained
  • 1 3/4 cups Bisquick Baking mix
  • 2 cups Shredded Cheese, any kind you like I used sharp cheddar and pepper jack

Instructions

  • Preheat the oven to 400 degrees
  • In a large mixing bowl, combine the uncooked sausage with the cream cheese and drained Rotel using a hand mixer or stand mixer
  • Mix in the Bisquick
  • Stir in the shredded cheese
  • Form into 1 inch balls and place them on a baking sheet lined with parchment paper.
  • Bake for 20-25 minutes or until they are golden brown and cooked through

Notes

These can be made up to 2 days ahead of time. Just keep them in an airtight container in the fridge. When you are ready to heat them up, use a low setting on the oven or even in the crockpot. I don't recommend microwaving them, the texture turns a bit chewy. 
You can freeze them for up to 2 months in an airtight container.
