Ingredients
3CupsShredded Zucchini Bread
3CupsAll Purpose Flour
1CupSugar
1CupBrown Sugar
1TspNutmeg
1TbspCinnamon
1TspBaking Powder
1TspBaking Soda
1Tsp Salt
1/2CupVegetable Oil
1/2CupApplesauce
3Eggs
1Tsp Vanilla Extract
Instructions
Preheat oven to 350 degrees.
Shred 3 cups of zucchini. DO NOT DRAIN IT!
In a large bowl, combine all of the dry ingredients and whisk them together.
Next, add all of the wet ingredients aside from the zucchini and mix together well. The dough will be thick at this point.
Add in the zucchini and mix until it is the consistency of pancake batter.
Pour into 3 small greased loaf pans, make sure to divide evenly. Bake for 55 minutes or until a toothpick inserted in the center comes out clean. Let cool on a wire rack for at least one hour.
Notes
It is best to wrap the loaves tightly in plastic wrap and keep in the refrigerator over night for the best flavor. If you can wait! These also freeze very well! Just wrap tightly in plastic wrap then place in a freezer bag and freeze for up to 3 months! If you would like to add any additional items such as chocolate chips, walnuts, pecans, etc, just add a cup of them in with the wet ingredients and follow the recipe as written!
