Smothered Chicken in the Crockpot

Ingredients

  • 1.5-2 lbs Boneless, skinless chicken thighs or breasts
  • 10.5 oz Can Cream of Chicken Soup with Herbs
  • .87 oz Packet of LOW SODIUM Brown Gravy Mix
  • 1 Yellow Onion, roughly chopped
  • 1 Green Bell Pepper, sliced

Seasonings

  • Garlic Powder
  • Onion Powder
  • Kinder's Blackened Seasoning
  • Zatarain's Creole Seasoning
  • Black Pepper

Instructions

  • Place the chicken in the bottom of the crockpot. Season with the spices listed above. There is no need to measure, just make sure the chicken is well seasoned. Just be careful to not use too much salt.
  • Place the onions and peppers on top of the chicken.
  • In a bowl, mix the cream of chicken soup with the gravy then spread it on top of the chicken and onions and peppers.
  • Place the lid on the crockpot and cook on low for 5-6 hours or on high for 3-4.
    Serve hot and enjoy!

Notes

This recipe can easily be customized with different vegetables or seasonings based on your preferences. 
This can be stored in the refrigerator for up to 3 days. I have not frozen this dish to know how well it freezes but it should be okay in an airtight container for up to 3 months. 
Be careful when using salty seasonings as there is already a lot of salt in the ingredients. You can always add more after cooking if needed.
