For the Dressing
1/2CupExtra Virgin Olive Oil
1/2tspChili Powder
1/2tspGarlic Powder
1/2tspCumin
1tspSalt (plus more to taste if needed)
1/2tspBlack Pepper
1tbspHoney
1/4CupRed Wine Vinegar
Juice of 1 Lime
For the Salad
15.25ozCan of Corn, rinsed and drained
15.5ozCan of Black-Eyed Peas, rinsed and drained
15.5ozCan of Black Beans, rinsed and drained
1pintCherry Tomatoes, quartered
1Green Bell Pepper, diced
1Red Bell Pepper, diced
1/2Large Red Onion, diced
2Jalapenos, dicedoptional
1/2CupChopped Fresh Cilantro
Instructions
In a cup or bowl, whisk together olive oil, chili powder, garlic powder, cumin, salt, black pepper, honey, red wine vinegar, and lime juice until well combined.
Add the rest of the ingredients into a large bowl.
Pour the dressing over it and mix really well.
Taste and adjust salt if needed.
Cover and refrigerate for at least 1 hour before serving.

This is a great make-ahead recipe and perfect for meal prep.Store in an airtight container in the refrigerator for up to 4-5 days.You may notice some liquid settling at the bottom over timeājust give it a good stir before serving.
