Easy Cowboy Caviar Recipe

Ingredients

For the Dressing

  • 1/2 Cup Extra Virgin Olive Oil
  • 1/2 tsp Chili Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Cumin
  • 1 tsp Salt (plus more to taste if needed)
  • 1/2 tsp Black Pepper
  • 1 tbsp Honey
  • 1/4 Cup Red Wine Vinegar
  • Juice of 1 Lime

For the Salad

  • 15.25 oz Can of Corn, rinsed and drained
  • 15.5 oz Can of Black-Eyed Peas, rinsed and drained
  • 15.5 oz Can of Black Beans, rinsed and drained
  • 1 pint Cherry Tomatoes, quartered
  • 1 Green Bell Pepper, diced
  • 1 Red Bell Pepper, diced
  • 1/2 Large Red Onion, diced
  • 2 Jalapenos, diced optional
  • 1/2 Cup Chopped Fresh Cilantro

Instructions

  • In a cup or bowl, whisk together olive oil, chili powder, garlic powder, cumin, salt, black pepper, honey, red wine vinegar, and lime juice until well combined.
  • Add the rest of the ingredients into a large bowl.
  • Pour the dressing over it and mix really well.
  • Taste and adjust salt if needed.
  • Cover and refrigerate for at least 1 hour before serving.

Notes

Make-Ahead & Storage

This is a great make-ahead recipe and perfect for meal prep.
Store in an airtight container in the refrigerator for up to 4-5 days.
You may notice some liquid settling at the bottom over time—just give it a good stir before serving.
