Cheesy Chicken Broccoli and Rice

A classic dish made with simple ingredients that even the pickiest eaters will love!

Ingredients

  • 1 lb Boneless, skinless chicken breasts or thighs
  • 3 tbsp Salted Butter, divided
  • 4-5 Garlic Cloves, minced
  • 1 Cup Long grain white rice I used Basmati
  • 2 Cups Roughly Chopped Fresh Broccoli
  • 2 Cups Chicken Broth
  • 2 Cups Cheddar Cheese, grated
  • 1-2 tbsp each Garlic Powder, Onion Powder and Paprika
  • Salt and Pepper to taste

Instructions

  • Cut the chicken into bite-sized pieces. Transfer to a bowl and season with enough garlic powder , onion powder and paprika to coat it well.
  • Heat 2 tbsp of the butter in a skillet over medium heat. Cook the chicken for about 5 minutes. Add the garlic in and cook for one more minute. Push the chicken and garlic to one side of the pan.
  • Add the other tbsp of butter in the other side of the pan. Once it is melted, add in the rice and toast it for a couple of minutes.
  • Stir in the broccoli and the chicken broth. Allow it to come to a gentle boil.
  • Place the lid on, reduce the heat to a simmer and cook for 12-15 minutes or until the rice is fully cooked.
  • Season with salt and pepper to taste. Add the cheese on top.
  • To melt the cheese, you can just place the lid back on or you can place it under the broiler for a couple minutes. (I find it easiest to just put the lid on for a few minutes!)

This can be stored in the fridge for up to 3 days
