Ingredients
1lbBoneless, skinless chicken breasts or thighs
3tbspSalted Butter, divided
4-5Garlic Cloves, minced
1CupLong grain white rice I used Basmati
2CupsRoughly Chopped Fresh Broccoli
2Cups Chicken Broth
2CupsCheddar Cheese, grated
1-2tbsp eachGarlic Powder, Onion Powder and Paprika
Salt and Pepper to taste
Instructions
Cut the chicken into bite-sized pieces. Transfer to a bowl and season with enough garlic powder , onion powder and paprika to coat it well.
Heat 2 tbsp of the butter in a skillet over medium heat. Cook the chicken for about 5 minutes. Add the garlic in and cook for one more minute. Push the chicken and garlic to one side of the pan.
Add the other tbsp of butter in the other side of the pan. Once it is melted, add in the rice and toast it for a couple of minutes.
Stir in the broccoli and the chicken broth. Allow it to come to a gentle boil.
Place the lid on, reduce the heat to a simmer and cook for 12-15 minutes or until the rice is fully cooked.
Season with salt and pepper to taste. Add the cheese on top.
To melt the cheese, you can just place the lid back on or you can place it under the broiler for a couple minutes. (I find it easiest to just put the lid on for a few minutes!)
