This Taco Tater Tot Casserole is loaded up with seasoned ground beef, Rotel, black beans, corn, cheese and of course tater tots to make a hearty delicious meal for the whole family!

Ingredients
2lbs Ground beefGround Chicken, turkey or sausage etc will work too
1Yellow Onion, Diced
2ozTaco Seasoning
10ozCan of Rotel
10ozCan of Red Enchilada Sauce
15ozCan of Black Beans
1Cup Corn, frozen, fresh or canned
4ozVelveeta Cheese
8ozShredded Cheese, any varietyI used half sharp cheddar and half pepper jack
30oz Bag of Frozen Tater Tots
Any toppings you might likesour cream, lettuce, jalapanos, hot sauce etc
Instructions
Preheat the oven to 400 degrees
In a skillet over medium heat, brown the ground beef with the diced onions. Drain the excess grease.
Add in the taco seasoning, the Rotel and the enchilada sauce. Give it a mix.
Stir in the beans, the corn and the velveeta and mix until the cheese is melted.
Top with the shredded cheese and then the tater tots. Bake for about 30 minutes or until the tater tots are nice and crispy!
