Taco Tater Tot Casserole

This Taco Tater Tot Casserole is loaded up with seasoned ground beef, Rotel, black beans, corn, cheese and of course tater tots to make a hearty delicious meal for the whole family!

Ingredients

  • 2 lbs Ground beef Ground Chicken, turkey or sausage etc will work too
  • 1 Yellow Onion, Diced
  • 2 oz Taco Seasoning
  • 10 oz Can of Rotel
  • 10 oz Can of Red Enchilada Sauce
  • 15 oz Can of Black Beans
  • 1 Cup Corn, frozen, fresh or canned
  • 4 oz Velveeta Cheese
  • 8 oz Shredded Cheese, any variety I used half sharp cheddar and half pepper jack
  • 30 oz Bag of Frozen Tater Tots
  • Any toppings you might like sour cream, lettuce, jalapanos, hot sauce etc

Instructions

  • Preheat the oven to 400 degrees
  • In a skillet over medium heat, brown the ground beef with the diced onions. Drain the excess grease.
  • Add in the taco seasoning, the Rotel and the enchilada sauce. Give it a mix.
  • Stir in the beans, the corn and the velveeta and mix until the cheese is melted.
  • Top with the shredded cheese and then the tater tots. Bake for about 30 minutes or until the tater tots are nice and crispy!
  • Serve with any toppings you like and enjoy!
