Add the first 9 ingredients to the crockpot but reserve half of the cheese. Stir lightly
Place the chicken in and make sure everything is covered by the liquid
Cook on high 2-3 hours or low for 4-6 hours
When it is finished take the chicken out and cut it or shred it
Boil the pasta until al dente and reserve a cup of the pasta water.
Add the pasta and the pasta water, the other 1/2 cup of cheese and the chicken into the crockpot.
Stir until the cheese is completely melted.
Let sit on the warm setting for 10-15 minutes to really thicken up.
Notes
This dish can be frozen for up to 3 months in an airtight container. I recommend reheating it slowly in the crockpot or on the stovetop. You may need to add milk to bind the sauce.
