Chili Cheese Frito Pie

Ingredients

  • 1 lb Ground Beef
  • 1/2 each Red and Bell Pepper, diced
  • 1 Yellow Onion, Diced
  • 3-4 Garlic Cloves, minced
  • 15 oz Can of Chili Beans
  • 14.5 oz Can of Fire Roasted Diced Tomatoes
  • 4 oz Can of Diced Jalapeños or Chilies
  • 8 oz Sharp Cheddar, grated
  • 8 oz Pepper Jack, grated
  • 1 bag Any Flavor of Fritos Corn Chips

Seasonings

  • 1 tbs Garlic Powder
  • 1 tbs Onion Powder
  • 1 tbs Chili Powder
  • 1 tbs Salt
  • 1 tbs Black pepper
  • 1 tbs Cumin
  • 1 packet Sazon Seasoning Mix
  • 1 tbs Slap Ya Mama or any Cajun seasoning optional

Instructions

  • Preheat oven to 400 degrees
  • In an oven-safe skillet, over medium heat, brown the ground beef with the onion, peppers and garlic. Drain the grease.
  • Add the seasonings, then the tomatoes, chili beans and diced jalapenos. Mix well.
  • Top with the cheese and bake for 15-20 minutes until cheese is golden brown and bubbly. Top with as many Fritos as you like, and any additional toppings.

Notes

If you do not have an oven-safe pan, just transfer the mixture to a baking dish before adding the cheese.
To serve it, you can also leave the Fritos off, and pour them in a bowl and add the filling on top.
To make it for a party, set out individual bags of Fritos, and they can be eaten like walking tacos!
